Hello everyone and welcome back to my kitchen!Β  With Valentine’s Day just around the corner,Β Β  I wanted to share a special pasta recipeΒ  that’s great not only for this holiday,Β Β  but year-round for any special occasion. We areΒ  going to making a creamy and cheesy Lobster MacΒ Β 

And Cheese. And this pasta recipe takes macΒ  and cheese to a whole another level! It’sΒ Β  made with a four-cheese cheese sauce, toppedΒ  with panko breadcrumbs, and butter poachedΒ Β  lobster tails. This elevated mac and cheeseΒ  is the ultimate creamy, cheesy comfort foodΒ Β 

Dish! We’re going to start by making the butterΒ  poached lobster tails with some shallots, garlic,Β Β  and parsley. And then for that cheese sauce,Β  we have four types of cheese. I also like toΒ Β  add in a little bit of smoked gouda and smokedΒ  paprika for just a light hint of smokiness,Β Β 

And it goes so well with those lobster tails!Β  We’ll combine everything together – the pasta,Β Β  the cheese, the lobster – sprinkle on some pankoΒ  breadcrumbs and then into the oven just untilΒ Β  those crumbs are nice and crispy on the top.Β  We’ll add some more lobster on top! You are inΒ Β

The best lobster mac and cheese! The first thingΒ  you’ll want to do when you get into your kitchen,Β Β  is start heating a large pot of salted water. YouΒ  want to bring that up to a boil for the pasta, andΒ Β 

We’ll need one pound of pasta. I found this reallyΒ  cute pipe pasta at Whole Foods; you can alsoΒ Β  use elbow macaroni or any kind of medium-sizedΒ  pasta. I have my pot going on the back burner,Β Β 

And now we could get to our lobster. So, you canΒ  use anywhere from 6 to 8 to 10 lobster tail tailsΒ Β  and that just all depends on your budget becauseΒ  lobster tails can be a little bit pricey! And weΒ Β 

Want to take the meat out of the shells first.Β  We want to go from inside the lobster tail toΒ Β  a whole lobster tail piece. For this, you’ll wantΒ  to turn the tail over, grab some kitchen shears,Β Β 

And you want to cut along right along theΒ  edge here to free this this top hard part. Peel this back. Then you can just break the shell around the tail,Β Β  slide your thumb underneath toΒ  kind of loosen it from the shell, and look at this gorgeous lobster tail! And then I rinse the lobster tails in waterΒ  and then pat them dry with paper towels. I’m going to keep half of my lobsterΒ  tails whole; we’re going to add thoseΒ Β  to the top. And the other half I’mΒ  going to cut into large chop chunks.

And now for butter poaching the lobster, I’mΒ  heating a large frying pan over medium heat;Β Β  you want to make sure the pan is not too hot.Β  We’re going to add in about 3 tablespoons ofΒ Β  butter, and I love to use salted butter because itΒ  adds so much great flavor! Let that butter melt.Β Β 

To the melted butter, add in one finely dicedΒ  shallot; three finely minced garlic cloves;Β Β  sprinkle a little bit of parsley; a touch of seaΒ  salt; little ground black pepper. Stir and cookΒ Β  for about a minute until the garlic and shallotsΒ  are softened. Going to add a little extra butter.

And then drop in the lobster. Cook the lobster for about 5 to 6 minutes,Β Β  just until it’s no longer translucent.Β  You don’t want to overcook the lobster! Transfer the cooked lobster into a separateΒ  bowl, and we’re going to set it aside for now.Β Β 

Make sure to save this incredible garlicΒ  and shallot butter; we’re going to add itΒ Β  back into the recipe later. And now we can getΒ  started on our cheese sauce! This cheese sauceΒ Β  is everything! It’s so creamy, so cheesy, and IΒ  love that we use four different types of cheese,Β Β 

Because why not?! You got to have all theΒ  cheese! All right, start with a sautΓ© pan,Β Β  and into the sautΓ© pan – you want this overΒ  medium, kind of medium low heat – we’re goingΒ Β  to add in 1/4 cup of salted butter. Make sureΒ  that butter gets completely melted. We’re goingΒ Β 

To start by making a roux. A roux is simply aΒ  combination of butter and flour and it reallyΒ Β  helps thicken the sauce. Into the melted butter,Β  add in 1/4 cup of all-purpose flour. We’ll whiskΒ Β  this together and then cook for about 4 toΒ  5 minutes allowing that flour to get cooked.

Next, we can gradually startΒ  adding in our half-and-half;Β Β  we’ll need 2 and 1/4 cups of half-and-half. IΒ  like to add about half a cup at a time and giveΒ Β  it a really good whisk after each addition,Β  allowing the mixture to cook and thicken.Β Β 

Make sure you’re whisking vigorouslyΒ  to ensure you don’t have any clumps. Pour in the last of that half-and-half, and nowΒ  we can start to season. I’m going to add in aboutΒ Β  a teaspoon and a half of sea salt; 1 teaspoonΒ  of dried garlic; 1 teaspoon of ground mustard;Β Β 

1 teaspoon of smoked paprika; and 1 teaspoonΒ  of dried onion. Whisk that all together. AndΒ Β  now we’re ready for our cheeses! So, I like toΒ  buy blocks of cheese and then grate all my ownΒ Β  cheese. So, we have 8 ounces of aged whiteΒ  cheddar cheese; you can also use the orangeΒ Β 

Variety. We have 6 ounces of grated gruyereΒ  cheese. This swiss cheese is really delicious;Β Β  it also melts really well and it’s perfect forΒ  mac and cheese. 1 cup of Parmesan cheese. AndΒ Β  we need 4 ounces of smoked gouda cheese. IΒ  just love having a little bit of smokinessΒ Β 

In this pasta! If you don’t want the smokyΒ  aspect, you could skip the smoked paprikaΒ Β  and use like a regular gouda cheese instead.Β  Let’s drop in all this incredible cheese! Mix it in with a spatula first to getΒ  combined with the cream sauce. Cook thisΒ Β 

Cheese sauce over medium-low heat for aboutΒ  8 to 10 minutes, stirring constantly untilΒ Β  that cheese is completely melted. You shouldΒ  have a really smooth and uniform cheese sauce. Once our cheese is nicely melted, I’m going toΒ  add in the shallot and garlic mixture that weΒ Β 

Cooked our lobster tails in. This is goingΒ  to add an incredible seafood flavor to theΒ Β  pasta! Grab your whisk and mix that in. I alsoΒ  like to add some more parsley at this point. Add in your cooked, drained pasta next. And then add in that cookedΒ  lobster. I like to save theΒ Β 

Tail pieces for garnishing the top.Β  And then just mix this all together! And then we’ll transfer our macΒ  and cheese into a nice casseroleΒ Β  dish. Technically you could just bakeΒ  the mac and cheese in the sautΓ© pan,Β Β 

But I like to have a beautiful presentationΒ  and a nice little white casserole is going toΒ Β  look great with this pasta. And last we needΒ  a panko breadcrumb topping. I have half a cupΒ Β  of panko breadcrumbs. We’re going to addΒ  in a couple tablespoons of melted butter;Β Β 

Add in about 1/4 teaspoon of dried garlic; aΒ  touch of parsley. And mix that all together. Sprinkle the mac and cheese with anΒ  even layer of breadcrumbs on top. And our lobster mac and cheese is readyΒ  for the oven! I have mine preheated toΒ Β 

425Β° Fahrenheit. We’re going toΒ  bake for about 15 to 20 minutes,Β Β  just until the breadcrumbs on the topΒ  become a nice golden brown color. YouΒ Β  can also use the broiler setting on lowΒ  for this step. And I love all that bubbly,Β Β 

Hot cheese on the sides! Once you take the macΒ  and cheese out of the oven, just top it with someΒ Β  chopped chives to garnish. You can add some moreΒ  lobster pieces on the top to garnish the dish. Along with a nice lobster tail!

And cheese is! The sauce is so creamy,Β  savory, cheesy! I love that really veryΒ Β  light hint of the smokiness coming through.Β  Let’s grab a chunk of lobster to go with it. This is food heaven for foodie right here! IΒ  wish I could eat this every single day! ThatΒ Β

Nice to see you use real 🦞. I've had to serve the fake stuff at a few places I worked. Here's a tip for your subscribers, if you see Lobster 🦞 M-n-C for under $15 it's either fake 🦞 or the portion is a cup. I always hated cheating the customers. You certainly didn't cut any corners.
