Hello everyone and welcome back to my kitchen!ย  Today I wanted to share with you a delicious saladย ย  recipe thatโ€™s perfect for holiday celebrations!ย  Weโ€™ll be making my Smoked Salmon Olivier Potatoย ย  Salad. This is a new and delicious twist on theย  classic Olivier salad! The original salad wasย ย 

Actually invented in the 1800โ€™s in Russia, andย  then a version of that became very popular inย ย  the USSR, Soviet era and all over Eastern Europe.ย  Itโ€™s still very much loved and enjoyed to thisย ย  day! Our family always has this for every singleย  holiday and special occasion! For today however,ย ย 

Iโ€™m going to be using smoked salmon insteadย  of the traditional bologna or chicken thatโ€™sย ย  typically used, and weโ€™re going to top itย  off with some salmon roe to make it extraย ย  fancy! The salad is made with cooked potatoes,ย  carrots, hard-boiled eggs, pickles, shallots,ย ย 

Peas, and then for the creamy dressing. Iย  like to do a combination of mayo, sour cream,ย ย  a little Dijon mustard, a touch of lemon zestย  which really brightens everything up! You areย ย  in for a real treat with this incredible salad!ย  You could find find the original Olivier saladย ย 

Recipe in my cookbook Beyond Borscht. Iโ€™m goingย  to leave order links down below, along with linksย ย  for this recipe up on my website. Iโ€™m going toย  include metric measurements as well. Meanwhile,ย ย  let me show you how to make this deliciousย  salad! Fill a large pot with water and thenย ย 

Drop in four medium sized potatoes; I like toย  use these Yukon Gold potatoes, theyโ€™re superย ย  easy to peel. And weโ€™re going to drop in aboutย  five medium to large size carrots. Cover thisย ย  and then bring this up up to a boil. Onceย  the potatoes and carrots come up to boil,ย ย 

Cook them until theyโ€™re fork tender. And thatย  timing can really depend on the size of yourย ย  vegetables I usually do about 15 to 18 minutesย  for the carrots, and 20 to 25 minutes for theย ย  potatoes. Once theyโ€™re done cooking, take themย  out, set them onto a tray, and let them cool downย ย 

Until theyโ€™re cool enough to touch. For our hardย  boiled eggs, weโ€™ll drop 10 large eggs into a potย ย  filled with cold water and then weโ€™ll bring thisย  up to a boil. And once it start starts boiling,ย ย 

Set a timer for 10 minutes. And then once theย  eggs are done boiling, you want to drain them,ย ย  fill them with ice water and ice cubesย  to so they cool down and stop cooking. While weโ€™re waiting for our veggies toย  cook, letโ€™s make that dressing. Weโ€™llย ย 

Start with 3/4 cups of mayonnaise; Iย  like to use avocado oil mayonnaise. A quarter cup of sour cream.ย  One tablespoon of Dijon mustard. Weโ€™ll need the zest of two lemons. Andย  these are Meyer lemons that I grew inย ย  my own backyard! They are so incrediblyย  delicious and the aroma is phenomenal!

Then squeeze in a couple tablespoons of thatย  lemon juice. Add in a couple tablespoons ofย ย  fresh chives; fresh chopped dill; aย  little bit of chopped capers. You canย ย  add this to taste โ€“ you can add a teaspoon toย  a tablespoon. A couple teaspoons of sea salt,ย ย 

And some ground black pepper.ย  And then mix this all together! Weโ€™ll need about 1 cup of finelyย  diced dill pickles. These will addย ย  a little bit of zestiness to the salad. [Applause] Once your eggs have cooked and cooled down inย  the ice bath, you want to peel them gently. Oops! Runaway eggs!

Finely dice your peeled hard-boiled eggs. I love to use my knife forย  chopping and dicing everything;ย ย  but, if you have one of those little gadgetsย  that will dice your veggies and your eggs,ย ย  you can also use that for this recipe toย  make this process a little bit quicker!

I have an 8 ounce package here of dry cured,ย  smoked salmon. You can get like a whole slab,ย ย  or you can get slices like I haveย  here today. Weโ€™re going to finelyย ย  dice the salmon into little bits.ย  You want to use a very sharp knifeย ย 

To dice the salmon into small pieces. Andย  a sharp knife is crucial here! That way,ย ย  youโ€™re actually slicing through theย  salmon and not just crushing it into mush! Once the potatoes and carrots have cooledย  down enough so that you can handle them,ย ย 

Grab a little paring knife andย  remove the peel very gently. Iย ย  like to cut the carrots down a littleย  bit so itโ€™s easier to work with them. Once peeled, grab a knife and finallyย  dice the carrots and the potatoes. Transfer for the carrots and theย  potatoes into a large mixing bowl. And now, itโ€™s just a matter of bringingย  everything together! So, letโ€™s add in ourย ย  diced eggs. And you can set it up this way inย  your mixing bowl if you want to prep everythingย ย  the day before. Weโ€™re going to add in our dicedย  pickles. Weโ€™ll need one cup of cooked sweet peas;ย ย 

I like to cook them in salted water to addย  some extra flavor. Add in the chopped salmon. I also have about 1/4 cup of dicedย  shallots; I used two medium shallots. Give that dressing one last stir and pour itย  right over, and weโ€™ll use a spatula and mixย ย 

Everything together. You want a reallyย  nice uniform combination of everything! Iโ€™ve transferred my Olivier salad intoย  a smaller serving bowl. Iโ€™m going toย ย  garnish it with a little little twirl ofย  smoked salmon on on the top. And I haveย ย 

Myself a bowl of some salmon roe. Weโ€™reย  going to add a little heaping mountainย ย  right in the center. Itโ€™s going to addย  lots of that incredible like salty,ย ย  briny flavor to the salad! And you canย  scatter a few of these pieces over the top.

This is such a festive andย  pretty salad for the holidays! Sprinkle with fresh chives and dill on the top. And thatโ€™s it for my Smoked Salmon Olivierย  Salad! I love how this turned out with theย ย 

Salmon roe on top! You can have some extraย  salmon roe on the side as well. Letโ€™s dig toย ย  enjoy! I canโ€™t wait to have some of thisย  incredible salad! This is so perfect forย ย  the holiday season! We have it for everyย  single holiday โ€“ Christmas, new yearโ€™s,ย ย 

Thanksgiving; anytime thereโ€™s a holiday orย  celebration, you have to have Olivier! So,ย ย  typically this would be served alongside aย  lot of other main dishes and mashed potatoesย ย  and like a meat side. You can alwaysย  enjoy it just on its own like this. Mmm!

This is simply phenomenal! I have had a lot ofย  different variations of Olivier salad throughoutย ย  my lifetime, but this by far is the bestย  Olivier salad recipe ever! The combinationย ย  of flavors here is just out-of-this-world! Youย  have that classic potato salad taste. You haveย ย 

A little bit of that lemon zest coming throughย  from the mayo dressing; the crunchy pickles;ย ย  and then you have the smoked salmon combinedย  with the salmon roe! It is the ultimate flavorย ย  combination! Itโ€™s like a flavor b***ย  in a really good way! So, so good! Mmm!
