One pan artichoke ‘orzotto’ 🤤 just as creamy & flavorful as regular risotto, but a fraction of the work 🙏🏼
(and with minimal dishes to wash after!)
ingredients:
1.5 cups dry orzo
1 round of Boursin cheese
1 cup marinated artichoke hearts (packed in oil)
1.5 cups grape tomatoes
3 cups bone broth (not stock, which will make it too salty)
1 tablespoon lemon juice
3 cloves garlic, minced
Black pepper to taste
I love topping this with seared cod or scallops, but it’s also a great accompaniment to leftover chicken you don’t know what to do with!
Note: The liquid absorbs more as the orzo cools, but if you want a thicker sauce feel free to leave in the oven longer as well.
