Ingredients
- 1 cup rice
- 6 cups water
- 3 tablespoons butter
- ½ cup finely chopped onions
- ¼ cup slivered blanched almonds
- ½ cup finely chopped green pepper
- ½ cup finely diced, thinly sliced cooked ham
- Salt to taste if desired
- Freshly ground pepper to taste

Preparation
- Rinse and drain the rice. Bring the water to the boil and add the rice. Let boil until rice is tender, about 17 minutes. Drain thoroughly.
- Meanwhile, heat 2 tablespoons butter in a heavy saucepan and add onions and almonds. Stir and cook until mixture is lightly browned. Add green pepper and ham and cook, stirring, about 5 minutes.
- Add the rice to the green pepper mixture and stir in remaining one tablespoon butter, salt and pepper. Stir to blend well. Cook 5 minutes, stirring.
