Ingredients

  • 2 large, red ripe tomatoes, about 1 pound
  • Salt to taste if desired
  • Freshly ground pepper to taste
  • ¼ cup fine fresh bread crumbs
  • 1 tablespoon finely chopped pars-ley
  • 1 teaspoon finely minced garlic
  • 2 teaspoons olive oil
  • 2 tablespoons finely chopped shal-lots

Preparation

  1. Preheat grill to high.
  2. Cut away and discard the core of each tomato. Cut tomatoes crosswise through the center. Sprinkle with salt and pepper.
  3. Combine bread crumbs, parsley, garlic, olive oil and shallots in a small mixing bowl. Blend well.
  4. Top each tomato half with an equal portion of the crumb mixture, pressing down with the fingers to distribute the topping evenly. Arrange tomato halves on a baking dish. Place them about 8 inches from the source of heat and let cook about 5 minutes.
