For some reason, there’s a common misconception that French fine-dining destination Feuille is a vegetarian restaurant. Their previous plant-driven dishes may have contained a surprising amount of green – both the colour and the leaves – but Feuille has never been just about vegetarianism or veganism, and new head chef Léo Daull’s menu changes narratives for good.

Rather than focusing solely on vegetables, Feuille’s culinary narrative has always been about celebrating the natural world as an ecosystem, with sustainable practices and local produce at its core. Chef Daull’s brand-new Menu Habitat highlights four distinct habitats – Ocean, Forest, Pasture, and Tropical – and transforms ingredients found in each terroir into an immersive dining experience through French technique and artful presentation.

The meal starts with a quartet of marine-inspired small bites including a shot of extracted clam water with marigold oil; a deep-fried prawn beignet presented in a wooden bowl full of prawn shells, to be dipped in a tangy prawn head sabayon; and a grilled baby squid skewer stuffed with eggplant and ricotta. Our favourite has got to be the trompe-l’œil musse, a mussel tartare housed in a beautifully constructed charcoal tempura shell that you can eat whole (we dug around hopefully in the rest of the empty mussel shells but there was sadly only one to eat).

Other highlights on the Menu Habitat include poached langoustine served with Kaviari Kristal caviar, a fantastic assorted mushroom pâté en croute served with mushroom jus, a matsutake and cep consommé jelly, and a local three-yellow chicken prepared traditionally en vessie – sealed inside a pig’s bladder.

New head chef Léo Daull has spent years at Michelin-starred institutions like Plaza Athénée, Le Chambard, and Le Jardin Secret, before bringing his skills to Hong Kong as sous chef at the two-Michelin-starred Cristal Room by Anne-Sophie Pic. New sous chef Alexandre Terrier will join the Feuille team from November, bringing a passion for eco-conscious culinary skills from Michelin-starred establishments like Bellefeuille, Zostera, and Tokyo’s Les Saisons. Both chefs have been selected and mentored by chef David Toutain to carry on the legacy of Feuille and bring the one-Michelin-starred and Michelin Green Starred restaurant to new heights.
