Lilli by chef Tyler Vorce, the former pop-up that ranks among the finest dining experiences to debut in Las Vegas in the past year, pop-up or otherwise, has finally set an opening date at its new permanent home in Chinatown.
The Lilli pop-up launched in November at Durango Social Club, the southwest space that is now a Vietnamese restaurant of the same name from chefs Dan Krohmer (of Other Mama) and Crystina Nguyen. The pop-up offered a seven-course tasting menu (and a menu of smaller bar bites) that drew on seasonal ingredients, French technique and Vorce’s training at the French Laundry, the Michelin three-star restaurant in the Napa Valley.
Lilli closed on June 7 in preparation for its move to 3616 Spring Spring Mountain Road, Suite 101, in the Grean Leaf Lotus complex, where the new restaurant opens on Oct. 8. Lilli joins Aroma Latin American Cocina, launched in late May, to extend fine dining in Chinatown east of Valley View Boulevard, to the eastern edge of the neighborhood.
On the menu
The new Lilli will offer four-course prix fixe and eight-course tasting menus built on seasonality, classic technique and Mediterranean grace notes, along with a more casual Lounge menu pairing à la carte dishes with wine and cocktails. The menus are still being developed.
Lilli’s wine program follows the same ingredient-driven approach as the kitchen, with wines selected for their ability to complement food. The wine list, including its wine-by-the-glass program, encompasses Old World and New World producers, balancing recognizable releases with smaller estates chosen for quality, character and sense of place.
“We have been working toward this moment since we first started Lilli,” the chef said in a Friday announcement.
“The residency gave us a chance to establish the food and the experience, but having our own space changes what is possible. We can finally bring together the kitchen, the dining room and The Lounge in the way we always envisioned. I cannot wait to open the doors and welcome people in.”
