Published on Main is bringing two out-of-town chefs into its kitchen for a one-night dinner this October.

Chef-partner Gus Stieffenhofer-Brandson will be joined by Stuart Brioza of San Francisco’s Michelin-starred State Bird Provisions and Mandel Hitzer of Winnipeg’s Deer + Almond for a multi-course menu inspired by Vancouver, San Francisco, and Winnipeg.

The plan has been in the making for a few years. Stieffenhofer-Brandson and Brioza first connected during Published’s early days, and have since cooked together at State Bird Provisions and Winnipeg’s RAW. Hitzer, a longtime friend and collaborator of Stieffenhofer-Brandson, later joined the pair in San Fran.

“This dinner is really a story about friendship and our shared culinary connection,” Stieffenhofer-Brandson says in a release. “Mandel and I have shared more kitchens than I can count. Getting all three of us together in Vancouver for one night is going to be such an experience for our guests. I’m really looking forward to having them in our kitchen.”

The tasting menu will feature dishes from all three chefs, with local ingredients, international influences, and a mix of acidity, heat, and spice worked into the evening.

“Gus and Stuart are two of my favourite people to cook beside, and I always enjoy bringing a little bit of Winnipeg to Vancouver,” Hitzer adds in the release. “It’s going to be a lot of fun.”

There’s some serious restaurant pedigree at the table. Brioza co-founded State Bird Provisions with Nicole Krasinski, while Hitzer’s Deer + Almond landed at number 50 on Canada’s 100 Best Restaurants list for 2026. Published on Main holds a Michelin star and was recently ranked number 17 on the 2026 North America’s 50 Best Restaurants list.
