Josh Harnden, the former creative culinary director of Eleven Madison Park, and Carlo Scotto, the chef behind Amethyst in London’s Mayfair, have joined the Nomad London in major F&B roles.

 

Harnden has been appointed global culinary director of Nomad, while Scotto has been named executive chef of the London hotel, housed in the Grade II-listed, former Bow Street Magistrates’ Court in Covent Garden.

 

Together, they will oversee the Nomad London’s signature restaurant, starting with the launch of a new autumn menu featuring seasonal dishes such as lightly aged Yorkshire duck with crisp skin and burnt orange duck jus and warm sticky toffee pudding made with dates.

 

Harnden began his career at Nomad New York and has since worked in kitchens including Canlis in Seattle, Davies and Brook in London, and One White Street and Orianna in New York.

 

He was also partner and creative culinary director at the three-Michelin-starred Eleven Madison Park in New York.

 

As global culinary director of Nomad, he will lead on menu direction, operational standards and creative vision across the hotel portfolio.

 

Meanwhile, as executive chef of Nomad London, Scotto will lead the hotel’s New York-inspired restaurant Twenty8 Nomad, as well as its broader food offering, which includes Side Hustle and the Library.

 

Previously in his career, Scotto trained under chefs Gordon Ramsay, Angela Hartnett and the Galvin brothers.

NoMad London opened in the former Bow Street Magistrates’ Court in London’s Covent Garden in 2021 and marked the group’s first hotel outside the US. 

 

The Nomad hotels joined Hilton in 2024 after the American multinational acquired a majority controlling interest in Sydell Group, the creator and owner of the Nomad hotels brand.

 

Earlier this week, The Caterer reported Mark Lee, the former Nomad London head of food and beverage, has joined Pan Pacific London as director of food and beverage.
