The Raiders are looking to step up the food and beverage experience at Allegiant Stadium this season, offering new menu items, souvenir vessels and a Fernando Mendoza-themed meal.

The Raiders hospitality arm, Silver & Black Hospitality, and stadium concessionaire, Oak View Group, debuted the new food and beverage items Tuesday, ahead of the 2026 NFL season.

Mendoza Special

A Taco Bell Cantina opened near Section 141 on Aug. 1, offering a specialty item for Raiders rookie quarterback Mendoza, who is a brand ambassador for the fast food chain. The Mendoza Special includes tacos, chicken fingers and fries accompanied with a cheese dipping sauce.

“When we were building the stadium and we started talking about food and beverage, it was like ‘How cool would it be if we had a Taco Bell in the building?’” Adam Feldman, Raiders vice president of sales and operations said. “It took six years, but Taco Bell Cantina.”

Feldman said the restaurant will offer some of the chain’s signature items, including crunchy tacos and bean and cheese burritos, but it will also offer some local items that are going to be specific to the stadium.

“The Mendoza Special, I don’t have to explain who that is named after,” he said. “We’re excited about that, and then it’s also the full cantina, so they have their Baja Blasts and slushies.”

New offerings

Other new concession items include fry bread pot roast tacos, a street dog torta, a focaccia and lox sandwich, a Korean Philly cheesesteak and a chile relleno burger.

A more upscale Japanese Wagyu offering is planned for the club-level suites at the stadium.

Dillon Schoell, Silver & Black Hospitality senior executive chef, said Allegiant is one of the only stadiums or arenas offering a 42-ounce bone-in A5 Wagyu tomahawk, with Raiders branding on the bone, after regulations in the U.S. recently changed.

“It’s kind of opened the door for us to be able to be able to do some amazing product that people really haven’t seen before,” Schoell said. “We’re really the first stadium and probably the only stadium right now using these kinds of products.”

The premium programming also features a Tierra Y Mar board that includes guajillo-crusted beef tenderloin and molcajete shrimp ceviche, a Las Vegas Flatbread that includes lemon ricotta, lobster, black truffle tenderloin and horseradish. There’s also a new caviar ice service featuring Tsar Nicoulai Golden Osetra caviar, blini, creme fraiche and other traditional accompaniments as an available upgrade to the Steakhouse Package and a la carte tomahawk offerings.

There is a full dessert cart available to those in premium areas of the stadium, with specialty offerings including a cake in the shape of Allegiant Stadium, a Dubai cookie cone and a blood orange panna cotta, in addition to a variety of cookies and pastries.

Game-specific items

Each Raiders home game will feature a specialty concession food item, a special hot dog themed around the day’s opponent and a signature cocktail.

For instance, for the Nov. 15 home game against the Seattle Seahawks, the focaccia and lox sandwich will be offered, according to Gilbert Morales, Silver & Black Hospitality executive chef, concessions.

“For Seattle, what got me thinking about that is that famous fish market they have in Seattle, so I said, ‘We’ll do some kind of lox sandwich,’” Morales said. “But nobody would make me a 10-inch bagel, so I went with the tomato focaccia, turned it into a sandwich instead of bagels, and I think it came out better than the bagel, because it’s easier to eat.”

Souvenir items

Souvenir items available this season include a Raiders helmet with a tray on top for chicken tenders and fries, an Allegiant Stadium-shaped popcorn bucket with a Raiders-branded strap, a Raiders beverage pouch with a lanyard, a Raiders shield cup and a Raiders football mug. The souvenir items will be available stadium-wide, Feldman said.

“We’re going to get more souvenir items fans can take home that are very specific and can only be found here,” Feldman said. “Some of these are being unveiled after preseason, so they’ll be available for the Dolphins game, our home opener, Sept. 13.”

The stadium’s food and beverages operations include five executive chefs and a sommelier.

Vendors

There are 38 vendors operating food and beverage spaces inside Allegiant Stadium. There are 13 local restaurant partners with Silver & Black Hospitality, which generated $1.2 million in commissions in 2025, up 34 percent compared to 2024, according to Silver & Black Hospitality.

Silver & Black Hospitality partners with 21 nonprofits to operate concessions to help raise funds for their programs. On average, the nonprofit groups earn $4,000 per event, according to Silver & Black Hospitality.
