When a bakery famous for Cereal Milk soft serve and Compost Cookies decides to go savory again, operators should pay attention. Milk Bar — the cult NYC sweet shop founded by James Beard Award-winning chef Christina Tosi — is reviving its long-dormant savory menu for the first time in years, and it’s doing it with a plant-based protein partner: Beyond Meat.

The collaboration runs August 26 through October 5, 2026 at Milk Bar’s flagship locations in New York City and Los Angeles, pairing the brand’s signature creativity with Beyond Meat’s plant-based protein on two limited-edition, crave-worthy items.

The Two Plant-Forward Menu Items

Beyond Breakfast Sausage® & Egg Spiral — Flaky, golden pastry spirals around savory Beyond Breakfast Sausage patty pieces, fluffy egg and melty cheese, baked into a swirled ring built for mornings worth waking up for.
Beyond® Meatball Parm Roll — The classic meatball parm, reimagined the Milk Bar way: tender Beyond Meatballs®, rich marinara and onions, and melty cheese wrapped in golden baked dough for a hearty, cheesy handheld bite.

For fans who can’t get to a bakery, recipes for both items will be posted on MilkBarStore.com so they can recreate them at home — a smart move that extends the campaign well beyond two zip codes.

Why a Sweet Shop Is Betting on Savory — and Plant-Based

This launch is guest-led, not gimmick-led. Milk Bar says plant-forward options have been among the most repeated requests from its fanbase over the years, and savory offerings have been off the menu for a while. The brand is answering both at once.

“At Milk Bar, we love the chance to play in a space we don’t often get to explore — this time, with savory,” said Christina Tosi, Founder and Chef of Milk Bar. “Beyond Meat is the perfect partner to create something accessible, surprising, and wildly craveable at the same time, that still feels unmistakably Milk Bar.”

For Beyond Meat, the play is distribution and discovery — meeting new consumers in a beloved setting rather than on a shelf.

“We’re excited to partner with Milk Bar to help bring its guests exactly what they’ve been asking for,” said Danielle Armbrust, VP of Marketing, Beyond Meat. “One of our biggest goals at Beyond Meat is making plant-based eating more accessible by showing up in the places people already know and love. Collaborations like this invite new consumers to experience Beyond Meat in a fun, familiar setting and demonstrate just how delicious and versatile plant-based protein can be.”

Why It Matters

For foodservice operators and menu developers, this is a case study in low-risk innovation. Milk Bar isn’t overhauling its brand — it’s using a limited-time offer (LTO) to test a whole new daypart and category based directly on documented guest demand. That’s the playbook: listen to your regulars, launch small, put an end date on it, and let scarcity drive urgency.

A few takeaways worth stealing:

Plant-forward is a mainstream lever, not a niche. Positioning the items for vegetarians, flexitarians, and the merely curious widens the audience instead of narrowing it — exactly how to grow check averages without alienating core guests.
Co-branding buys credibility fast. A recognized protein partner de-risks a new format and gives operators built-in marketing muscle.
LTOs generate data. A defined August-to-October window lets Milk Bar gauge whether savory earns a permanent slot — a template any operator can copy before committing kitchen space or capital.
Recipes-at-home extends the halo. Publishing the recipes turns a two-city launch into a national brand moment at almost no incremental cost.

Milk Bar has been turning familiar treats upside down since 2008 and was named one of Fast Company’s most innovative companies in the world in 2022. Beyond Meat (NASDAQ: BYND), founded in 2009, builds plant-based products designed to match the taste and texture of animal meat with non-GMO ingredients and zero cholesterol. Together they’re betting that the fastest way to grow plant-based dining is to make it delicious, familiar, and hard to resist.
