INDIANAPOLIS (WISH)— Saltgrass Steak House has brought its Texas-style cuisine to Hamilton County, opening its second Indiana location Dec. 19 at Hamilton Town Center.
The restaurant, at 14065 Town Center Boulevard next to Total Wine, expands the Texas-based chain’s presence in Indiana following its Mishawaka location. Saltgrass has more than 97 locations nationwide and is known for its Western-style steakhouse experience and scratch-made menu.
One of Saltgrass’ signature weekend offerings is its slow-roasted prime rib, available Friday through Sunday.
Regional Culinary Director Bernest Pena oversees the preparation, which begins with a 16-pound prime rib roll. The meat is trimmed, seasoned with the restaurant’s seven-spice blend and roasted at 500 degrees for 20 minutes before the temperature is lowered to 200 degrees. It then cooks for two to four hours, until reaching an internal temperature of 125 degrees.
The prime rib is served with homemade horseradish sauce made with horseradish, sour cream, Tabasco, dry mustard, sugar and cayenne.
The menu includes several Saltgrass favorites, including:
Rattlers: Jumbo shrimp wrapped in jalapeño and cheese
Baby back ribs: Seasoned with the restaurant’s seven-spice blend

Friday: 4-11 p.m.
