A 210-year-old Flemington landmark will reopen Sept. 15 as a boutique hotel featuring multiple dining concepts, nightlife venues and entertainment options.
The Union Hotel, part of the Tribute Portfolio Hotel chain, will reopen following an extensive restoration of the property originally established in 1814. The hotel will include 100 guest rooms, including 10 suites, along with Jersey Prime Steakhouse, JP’s Cocktail Parlour and pet-friendly accommodations at Courthouse Square on Main Street.
A public ribbon-cutting ceremony is scheduled for Sept. 14 at 11 a.m.
Developer Jack Cust led the project, which focused on preserving original architectural elements while modernizing the space.
“Throughout the redevelopment process, great care was taken to preserve and restore as many original architectural elements and historic details of the property as possible,” Cust said in a written statement. “The project intentionally blends the preserved bones and historic integrity of the building with contemporary design, allowing The Union Hotel to maintain its rich sense of history while introducing a refreshed guest experience built for today’s traveler.”

Concord Hospitality will operate the hotel, which will be part of the Marriott Bonvoy portfolio. Mark Laport, president and chief executive officer of Concord Hospitality, said the property appeals to modern travelers.
“The Union Hotel represents the kind of destination travelers are increasingly seeking — one that delivers authentic character, elevated hospitality, and an experience that feels deeply connected to its history and surroundings,” Laport said in a statement.
Executive Chef Andrew Lattanzio will lead the culinary program. Jersey Prime will serve as a modern Italian steakhouse featuring steaks dry-aged in-house, house-made pastas, seafood, a raw bar and handcrafted cocktails. The menu will include ingredients sourced from Hunterdon County farms.
“At Jersey Prime, our goal is to create a dining experience that feels both refined and welcoming,” Lattanzio said. “We focus on high-quality ingredients, thoughtful execution, and bold, approachable flavors that reflect the spirit of the Union Hotel and the community it serves.”

JP’s Cocktail Parlour will offer craft cocktails in an intimate setting within the hotel. FIELDHOUSE SOCIAL, an entertainment venue featuring duckpin bowling, golf simulators, darts, shuffleboard and self-service beverage walls, will open later this year.
The hotel will also accommodate weddings, corporate retreats and other events with flexible spaces for up to 140 guests and two breakout rooms.
