After almost a year, some signs of progress are appearing at a planned Tex-Mex and Latin American fusion restaurant in Courthouse.

Signage for Rocoto’s Restaurant and Bakery is up at 2111 Wilson Blvd, and a liquor license was approved last week.

Owner Jaime Vargas announced plans for the space back in August 2025, promising fajitas, tacos, baked goods and a variety of seafood at the former home of Corner Bakery Cafe, which closed in February 2023.

Vargas originally hoped to open the “high-end casual” spot in October and appeared to be moving forward on renovations, but the plans stalled.

Vargas did not respond to requests for comment on this story, and Rocoto’s doesn’t appear to have a website yet.

Last year, Vargas, who also owns San Antonio Bar & Grill in D.C., said he was planning to emphasize seafood, serving dishes like ceviche, seafood tamales and tacos filled with mahi-mahi and tuna. He also planned to use the leftover bakery equipment to make saltenas, or Bolivian meat pies, in addition to cakes and baked goods for dessert.

Planned drink options included margaritas and pisco sours.

The restaurant will have seating for about 100 people inside and 46 people on an outdoor patio.
