LAS VEGAS (FOX5) — El Cortez Hotel and Casino is marking its 85th anniversary with two new restaurants opening in mid-October.
The historic Fremont Street property is adding a luxury New York-style steakhouse, Alex Prime, and a reimagined breakfast-and-lunch spot, Siegel’s 1941.
Alex Prime menu and hours
Alex Prime will open daily at 5 p.m., focusing on USDA Prime steaks, slow-roasted prime rib, chef-driven seafood and shellfish, plus Italian-inspired pastas and desserts.
The steakhouse will feature a curated wine list, classic cocktails such as martinis and old fashioneds, and a front-of-house team recruited from top Strip restaurants.
Alex Prime is expected to operate from 5 p.m. to 10 p.m. Monday through Friday, and until midnight on Saturdays and Sundays.

Siegel’s 1941 menu and hours
Siegel’s 1941 is named for former owner Benjamin “Bugsy” Siegel and the year El Cortez opened. The restaurant will serve breakfast from 7 to 11 a.m., followed by lunch until 2:30 p.m., with a limited takeout menu available through 5 p.m.
The menu includes matzoh brei, country-fried steak, eggs benedict, patty melts, gourmet burgers, steak frites, penne alla vodka, and a signature New York cheesecake.
Siegel’s 1941 will be open from 7 a.m. to 2:30 p.m. daily.
Shared dining room
Both restaurants share a newly designed dining room steps from the casino’s main entrance. The space features emerald green banquettes, cognac leather seating, wood paneling and gold details, and seats more than 150 guests. Complimentary valet parking is available.
Anniversary countdown
The openings come as El Cortez, a former hangout for Bugsy Siegel, Meyer Lansky, and Rat Pack regulars, counts down to its 85th anniversary on Nov. 7.
