Beloved Fairwood restaurant relaunches as Uno Maz

“Viva Uno Maz!”
The guy in the pickup slowed, poked his head out, and yipped a message out-and-over the Fairwood parking lot, where family and supporters of Adrian and Genesis Sahagun were waiting to celebrate the opening their new Mexican restaurant, Uno Maz on Saturday, Sept. 14.
Until recently the place was called La Fuente Mexican Restaurant, a popular eatery with a solid reputation for great food and friendly service at the intersection of Sunset Blvd Northeast and Petrovitsky Road.
Yes, said Adrian and Genesis, who ran La Fuente with Adrian’s father Salvador from 2017 to 2024, the food was top notch, but the building was old, outmoded, tired.
Indeed, the family was poised to close it up in 2024. But the hard-working Sahaguns said nope.
“We saw it as an opportunity to build a family legacy, and decided to give it a shot,” Genesis said, casting an eye at the couples’ children: Virginia, Adrian Jr. and Zaraya.
So, in December 2025, the Sahaguns renegotiated the building’s lease, re-signed and then set to work.
And there was a lot of work to do.
“We gutted the restaurant and made it all brand new,” said Adrian.”We gave it a new business name because we wanted it to be our own thing. We drew up a new business plan, and my wife and I and my father-in law took over, and we renamed it Uno Maz — one more of everything.”
“We bought in new plates, added dishes and desserts to the menu, improved the lighting in the bar and brought it back to life. Now we have draft beers, and a patio that’s going to be open next summer,” said Genesis. “It’s a totally fresh concept —everything is totally fresh and new.”
The one thing that didn’t change is the family that owns and operates the restaurant established by Adrian’s father Salvador in 2017, the third of three La Fuentes. He opened the first restaurant in 1987 at 3321 NE Sunset Blvd in the Renton Highlands, and the second in the City of Wenatchee.
Diane Dobson, president of the Renton Chamber of Commerce, commented on the large crowd, which gave the grand opening the air of a large family gathering.
“When we have babies, we have a baby shower,or we have weddings, we have a wedding shower. This is our community’s way of stepping up for this family, to say we believe in you, we see your vision, and we’re going to do what it takes to support you through this process,” said Dobson.
Uno Maz is located at 14400 SE Petrovitsky Rd. is open from 11 a.m. to 9 p.m., Tuesday through Sunday and from noon to 8 p.m. on Mondays. For the full menu and more, visit unomazrestaurant.com.
