Pho, the Vietnamese street food operator, has signed a 15-year lease for a 3,681 sq ft space at the Cribbs Causeway retail centre near Bristol.
The restaurant will replace Carluccio’s when it opens later this year, becoming Pho’s second location in the city.
It follows recent openings of Picaro Lounge, Joe & The Juice, Pizza Express, Honest Burgers, and Wingstop at the 150-unit shopping centre, which opened in 1998.
Katie Searle, director of asset management at Sovereign Centros from CBRE, the centre’s operating partner, said: “The addition of Pho allows us to further diversify the dining offering at Cribbs as we create more choice for our visitors.
“Pho has become one of the UK’s rising F&B [food and beverage] stars and we are delighted that they have selected Cribbs for their second Bristol location.”
The new arrivals come as Cribbs looks to refresh its dining offer to cater for its growing Gen Z audience, which rose by 13% last year.
Pho will join Wagamama, Nando’s, and Itsu at the South West shopping and leisure destination.
The restaurant will benefit from the growing residential community across the Cribbs Causeway area, with the Brabazon development set to add 6,500 homes and 2,000 student rooms when completed.
The long-awaited 19,500-capacity Aviva Arena at the site is set to open in 2028.

Sovereign Centros from CBRE provide full asset management services across Cribbs on behalf of owner M&G Real Estate.
Time Retail Partners and Cushman & Wakefield are retained letting agents for the centre, with Green & Partners retained in the leasing advisory role.
