A local Mexican restaurant chain with roots in Littleton and outposts along the Front Range is expected to open two more in Colorado Springs and Loveland next year, its family owners announced.
The news comes shortly after Los Dos Potrillos trimmed its menu significantly in order to put some of its favorite family recipes front and center. The business will celebrate its 25th anniversary in 2027.
The first of the new restaurants, at 5832 Barnes Rd. in Colorado Springs, will open early next year, according to the Ramirez Hospitality Group. The Loveland restaurant, at 6015 Sky Pond Dr. in the Promenade Shops at Centerra, will follow in the spring.
“Colorado Springs and Loveland have both been on our radar for a long time, and we couldn’t be more excited to finally bring Los Dos Potrillos to both communities,” company CEO Daniel Ramirez said in a statement.
After that, the Ramirez family expects to keep going at a pace of two or three new locations a year.
Founded by José and Martha Ramírez in 2002, Los Dos Potrillos began in Centennial and currently has 6 locations. Its most recent was also its first inside the city of Denver, at 4100 E. Mexico Ave.
