Negroni Week 2026 runs through Sunday, which means there’s still an entire weekend to raise a glass, and eleven American bars ready to make it count: Dante in Greenwich Village and its Beverly Hills rooftop sibling, both with full Negroni Sessions menus; Nightcap in Chicago, with nine Negronis on a single menu; Bar Volpe in Boston and its three-drink flight; ViceVersa’s house-vermouth Negroni in Miami; the purist’s pour at Houston’s Anvil; Cure in New Orleans; a Cynar-spiked version at All Souls in D.C.; Saint Valentine’s Pink Negroni in Dallas; Capolinea’s house Negroni above downtown Atlanta; and HMF’s Flagler Negroni at The Breakers in Palm Beach.
Three ingredients. Equal parts. Stirred, cold, done.
It sounds like a drink a child could make (please don’t let a child make it), and yet it’s one of the easiest cocktails in the world to get wrong. Too warm and it’s cough syrup. Too diluted and it’s a sad pink puddle. Too heavy on the vermouth and you might as well be drinking a candle. A great Negroni gives a bartender absolutely nowhere to hide, which is exactly why the bars below are so fun to watch. This isn’t a ranking (the Negroni is far too Italian to submit to one). It’s a map of the places doing the drink with conviction, whether that means guarding the classic or taking it somewhere wild. Pick one, or three. It’s Negroni Week. I won’t tell.

Negroni Week 2026, the 14th edition of the Imbibe and Campari fundraiser for Slow Food, runs September 21 to 27. Dante
Greenwich Village, New York City
Dante, the century-old Greenwich Village café that Nathalie Hudson and Linden Pride turned into the World’s Best Bar in 2019, is the address every other Negroni program on this list is quietly measuring itself against. Its Negroni Sessions menu runs from the classic to a Chocolate Negroni, a mezcal Mezcalito, a Negroni Bianco and the aptly named Unlikely Negroni, a tequila, pineapple-vinegar and banana situation that has no business working (it works). I’ve written about Hudson’s empire before, and the woman simply does not do anything by half.
First visit? Start with the Negroni on tap. Second visit, order the flight and find out how far the drink can wander before it stops being itself.

Nightcap
Bucktown, Chicago
Nightcap is a 23-seat bar hiding behind Class Act in Bucktown, and it has done the most Negroni thing imaginable: built an entire menu, called ONE, around nine versions of the drink. The collection moves through dry, juicy, sweet and savory interpretations, which is either a tasting menu or a dare, depending on how many rounds you’re planning.
Start lean and bracing, then let the menu pull you toward the stranger stuff. Just maybe don’t try all nine. (Or do. I’m not your mother.)

Bar Volpe
South Boston
Bar Volpe, the Southern Italian restaurant in South Boston, gives its Negroni lovers what can only be described as a family tree: the Familia di Negroni menu. There’s the classic with Malfy gin, Campari and a rosso vermouth blend; a brighter Bianco lifted with Italicus and grapefruit bitters; a mezcal version for the smoke-inclined; and a rotating Negroni of the Moment.
Commitment-phobes, rejoice. The three-drink flight lets you taste around before you settle down.

Dante Beverly Hills
The Maybourne Beverly Hills, Los Angeles
Dante Beverly Hills sits on the rooftop of The Maybourne, where it has been pouring its own Negroni Sessions menu since 2023. The lineup moves from the house classic to a Bianco, the tequila-based Cielo and a hibiscus-infused mezcal Mezcalito, all served with a view of the Hollywood Hills and a crowd that, let’s say, has been told it’s photogenic.
Is it a little sceney? Of course it is. It’s a rooftop in Beverly Hills. Order the Cielo, find a cabana and surrender.

ViceVersa
Miami
ViceVersa is a Miami aperitivo bar that treats the Negroni less as a menu item than as a personality. Its house Milano-Torino vermouth blend (a nod to the two cities that gave us the aperitivo) anchors a whole family of drinks, including the Negroni and the Sbagliato, and the approach is deeply Italian: nail the bittersweet foundation, then let guests choose between gin, bubbles or something in between.
Come for a drink. Stay for the pizza. You were never leaving without the pizza.

Anvil Bar & Refuge
Montrose, Houston
Anvil Bar & Refuge is the Houston institution that helped kick off Texas’s craft-cocktail revival, and the Negroni holds its place on the bar’s famous list of 100 classics. There’s no gimmick here, no banana, no chocolate, just a three-ingredient drink treated with the same seriousness as everything else in the canon.
After a week of wild riffs, this is the palate cleanser. Sit at the bar, order the original and remember why you fell for it.

Cure
Freret Street, New Orleans
Cure opened on Freret Street in 2009 and helped define New Orleans’ modern cocktail scene in a city that already considers itself the inventor of most of them (it has a point). The room practically begs you to linger, and the bartenders can swing from a textbook Negroni to something far more adventurous without blinking.
The menu rotates, so ask what Negroni variation they’re pouring right now. They’ve done a White Negroni before; whatever’s on tonight, trust them.

All Souls
Shaw, Washington, D.C.
All Souls, the unpretentious neighborhood bar in D.C.’s Shaw, builds its Negroni with Tanqueray, Carpano vermouth and Cynar, the artichoke-based amaro, in place of Campari. The swap takes the drink’s bright red bitterness somewhere darker, earthier and more herbal, which suits a bar that has never once needed to shout.
If Campari has never been your friend, this is your gateway.

Palm Beach, Florida
HMF occupies The Breakers’ Florentine Room, a gilded Palm Beach set piece named, like the hotel’s Flagler Negroni, for founder Henry Morrison Flagler. The drink sticks close to the classic (Nolet’s gin, Campari and vermouth, stirred and served very cold), because in a room this grand, the cocktail doesn’t need to show off.

Saint Valentine
East Dallas
Saint Valentine is an East Dallas cocktail bar dressed in smoky mirrors, tile mosaics and diner-style booths, the kind of room that makes a second round feel less like a decision and more like destiny. Its Pink Negroni puts a strawberry-infused Campari at the center of the glass, a playful, rosier take that purists will side-eye and everyone else will order twice.
Is it a Negroni the way Count Negroni intended? No. Is it delicious? Also no, it’s very delicious.

Capolinea
Downtown Atlanta
Capolinea is a polished Italian restaurant overlooking downtown Atlanta, and the move here is to order the house Capolinea Negroni at the bar before dinner and let the evening take its time. It’s the dressed-up entry on the list, less a Negroni lab than a proper Italian aperitivo moment with a skyline attached.
Wear something nice. Order the Negroni first, the pasta second and whatever the sommelier suggests third.

Here’s the thing about Negroni Week: it’s a party with a conscience. For seven days, bars around the world stir, pour and donate to Slow Food, and bartenders get a hall pass to put chocolate, banana and even olive oil in a drink that has been perfectly fine since 1919.
