A popular West End restaurant has announced it will be relaunching itself under a new name as part of a fresh concept.
Santa Lucia on Byres Road will transform into Encore from October 9 as part of an “exciting new chapter” for the business.
The much-loved Italian restaurant is taking on a new journey in the hopes that they can bring together the eatery’s Italian heritage with the flavours, produce and culinary traditions of Scotland.
Encore will mark a transformation with a refreshed menu, new interior and a renewed atmosphere designed to create something distinctly different while owners say they will stay true to the spirit of Santa Lucia.

With plates starting from just £8, bosses at Encore say they are aiming to make it easy for diners to try a variety of dishes and experience the full range of Scottish and Italian flavours across the menu, whether visiting for a casual meal, a family gathering or a night out with friends.

At the heart of Encore’s new direction is the collaboration between Executive Head Chef Michele, whose expertise lies in authentic Italian cuisine, and Encore Head Chef Ryan McCutcheon, a professional local Scottish chef specialising in Scotland’s classic dishes and exceptional local produce.

Their menu is set to feels familiar to Santa Lucia guests while offering something entirely new, with classic Italian cooking meeting the best of Scottish culinary traditions.
Head Chef Ryan McCutcheon, said: “Encore is a new project. It’s going to be a marriage between Scottish and Italian. We’re using the best of Scottish larder there. We’re using some Italian influence in the background, honing my skills in to refine the plates, designed to enjoy on your own or with friends and family.
“Encore, it’s going to be fun, it’s going to be approachable, it’s going to be great plates of food. We hope to see you all down here soon. I’ll be out on the floor, so will the rest of the team ready to welcome you.”
