Wimpy’s Seafood Cafe is moving into The Roadhouse’s Hyannis location after its Osterville lease was not renewed.The new establishment will be called Wimpy’s Roadhouse, pending state approval.The new owners plan to merge the menus and staff from both restaurants.
Guests will be able to eat Wimpy’s Seafood Cafe chowder while sitting at The Roadhouse Cafe’s famous piano bar later this fall.
“It will be Wimpy’s Roadhouse, although we can’t officially call it that until the state ABCC (Alcoholic Beverages Control Commission) approves it,” said Adam Hostetter, who bought The Roadhouse for an undisclosed price Sept. 26 with his business partner Adrian Pryshlak.
The Roadhouse is located at 488 South St. in Hyannis. Wimpy’s Seafood Cafe and Market on Main Street lost its Osterville home of 88 years when its lease was not renewed. Hostetter and Pryshlak also own Fancy’s Market in Osterville and The Break Hyannis, a restaurant and bar across from Hyannis Harbor.
Hostetter said Monday that in buying The Roadhouse, with plans to have it open year-round, he and Pryshlak are looking to combine the best of both restaurants in terms of decor and menu, while also bringing along several of Wimpy’s longtime kitchen staff, servers and bartenders to the new location.
“One of the big changes to accommodate our existing clientele is that we will be open for both lunch and dinner. We think it will be a nice new offering to Hyannis with our lunch menu,” he said.

Both The Roadhouse and Wimpy’s remain open during the transition, Hostetter said, noting that Wimpy’s last day in Osterville is Oct. 10 and that he hopes to open the Hyannis location about a week later.
Ricardo “Ricky” Conrado, who has owned The Roadhouse with his partner, Marcello Mallegni, since 2024, said Monday that he expects The Roadhouse Cafe’s last day will be Oct. 5.
“My initial plan was always to make it operational and then sell it,” said Conrado, a former Army National Guardsman who bought his first restaurant from Dave Colombo. The 180-seat eatery had been closed for four years when Conrado and Mallegni bought it in 2024.
In the past, The Roadhouse Cafe was known as a regular spot for musicians like Colombo’s father, the late Lou Colombo, and celebrities including crooner Tony Bennett, Celtics great Bill Russell, members of the Kennedy clan, and actors Kevin Spacey, Bruce Willis and Demi Moore.
Conrado, who also works in real estate, said he has no plans to continue working in the restaurant industry. He and his wife have purchased an RV and plan to travel the country for a year.
The self-taught cook said he will probably continue making The Roadhouse Cafe’s signature Bacon-Crusted Salmon, “which in my wife’s favorite dish.”
Here on the Cape, Hostetter said staff from Wimpy’s and The Roadhouse are working on “merging the menu” to ensure signature dishes from each restaurant are still available.
Although some decor changes are expected, Hostetter said, ”That piano bar is really cool and we will be looking to take advantage of it. You can have drinks or a plate of food right on the piano.
“It’s not being used right now and that’s an example of us leaning into one of the Roadhouse attributes that over time have made The Roadhouse The Roadhouse.”
