A new location of Los Tacos del Pepe recently opened on McPherson Road, adding to Laredo’s dining options with a variety of tacos and dishes distinctive to northeastern Mexico.
Diana Torres, one of the restaurant’s partners, spoke with LMT about what motivated them to establish restaurants in Laredo.

“I’m originally from Saltillo, Coahuila, and I came to Laredo 20 years ago,” she said. “My journey in the restaurant business began indirectly because it wasn’t my field, and it certainly wasn’t something I had planned. Pepe Gamez and I started by selling food for delivery and, little by little, we grew into what we are today. It has been a journey of learning, hard work and constant adaptation.”
Torres said Los Tacos del Pepe grew out of the experience they accumulated over the years in the restaurant industry.
“Pepe wanted to bring together the best of what we had learned through our different projects and shape it into our own concept, with an identity that would set us apart,” Torres said. “Rather than defining ourselves solely as Northern Mexican food, we wanted to preserve the essence of the cantinas from our hometown, Saltillo, and everything that surrounds them.
“Laredo is a very taco-oriented city, and we wanted to offer a different alternative, with tacos that stood out from their presentation to their flavor, without losing our roots.”

Torres said the first restaurant opened in 2022 under a different name.
“Over time, the concept evolved, developed its own identity and incorporated new options until it became Los Tacos del Pepe,” Torres said. “In our growth, Parminder ‘Bounty’ Gyani was a fundamental piece. He had the vision to see the potential of the project, believed in it and pushed us to take it to the next level. His confidence was very important in helping us get to where we are today.”
Torres said one of the main challenges they faced was creating a brand with its own identity, something that would connect with people and stay in the public’s memory.
“It wasn’t simply about opening a restaurant, but about building a concept that had personality, that people would recognize and want to return to,” she said.

Torres said one of their greatest accomplishments has been seeing how a project that started small grew into a brand recognized by many people in Laredo.
“I’m also proud of everything we have learned and built along the way, as well as our ability to continue evolving and looking for new opportunities,” she said.
Torres said they are very grateful to the Laredo community.
“People have given us the opportunity to grow, to give themselves the chance to try something different and to accompany us through this evolution,” she said. “That support motivates us to keep working and to never lose sight of the quality and service our customers deserve.”

For Torres, Los Tacos del Pepe distinguishes itself from other restaurants by offering more than just tacos.
“At our restaurants, we offer an experience with personality, good flavor and an atmosphere where people can gather, socialize and have a good time,” she said. “We like our dishes to have a different presentation, but above all, to maintain that flavor that makes you want to come back.”
Torres thanked the community for trusting them, visiting their restaurants and allowing them to be part of their lives.
“Behind this project is a lot of work, effort and people who believe in what we do. Every customer who chooses us is part of our story and motivates us to continue growing,” she said. “Los Tacos del Pepe is a project that continues to evolve. We have learned that growing means adapting, working as a team and maintaining the vision, even when the road presents challenges. We are grateful for what we have built and excited about what is still to come.”

Torres invited the community to visit Los Tacos del Pepe at either of its two locations and try its menu.
“We invite you to get to know us and give our concept a chance,” she said. “We have a variety of tacos and dishes for people who enjoy good food and a different atmosphere. We would love to welcome you and have you discover for yourselves what makes Los Tacos del Pepe so special.”
The latest Los Tacos Del Pepe location is at 5118 McPherson Road.
