This week in the Tennessee Valley, live cockroaches in all stages of life were found throughout the kitchen, raw meats were improperly stored above foods, and multiple ready-to-eat foods were not properly date-marked.
Many foods like cooked meats, cooked broth, and veggies were not properly date marked. Prepped and cooked foods were found improperly protected and covered in the walk-in freezer. Inspectors found closed containers of raw sausage stored improperly over wrapped containers of ready-to-eat foods. Health inspectors found employees actively drinking from open beverage containers in the kitchen area during the time of inspection. Another employee was found handling soiled dishes, then touching clean dishes and items on the prep table.
Health inspectors found live cockroaches in all stages of life throughout the kitchen. Frozen oxtail was taken and reheated at improper heating temperatures. Inspectors found prepped Macaroni and Cheese being held at unsafe temperatures. Multiple ready-to-eat foods, like Jerk Chicken, were found in the refrigerator without proper date markings on them. Multiple pieces of equipment were found accumulated with debris, built-up grease, and in need of repairs.
Cockroaches were also highlighted in the restaurant’s health inspection in May of this year.
Health inspectors found raw chicken stored over raw beef in the walk-in cooler. A rice scoop was stored in water at unsafe temperatures. Scoop handles were found stored in sugar and cornstarch. Inspectors found to-go containers stored on prep tables near raw meats. Employees were found storing personal items like phones and purses in the food prep areas and near kitchen equipment.
