Inspectors cited restaurants for an excessive buildup of dead flies hanging over ready-to-eat foods, cigarette packs scattered among the kitchen, and heavy mold accumulation surrounding bread in a freezer.
The inspector found live flies throughout the main kitchen, landing directly on freshly cut vegetables that had to be thrown out afterward. A fly trap ribbon hanging above food prep tables and ready-to-eat foods was caked with a heavy accumulation of dead flies.
Raw chicken was found thawing directly above ready-to-eat salad bowls in the walk-in cooler, meaning all 12 bowls had to be discarded. In the same cooler, raw chicken was stored above raw shrimp and raw steak, with another pan of raw shrimp sitting above a box of avocados. A lidless container of raw scallops was also found next to ready-to-eat food. Tofu sitting in a reach-in cooler had to be thrown out for being held at an unsafe temperature.
Two separate leaks — one at a handwashing sink faucet, one under the three-compartment sink — were being caught in buckets instead of repaired. Utensils were being stored at the wrong temperature, and the kitchen’s handwashing sink was being used to store knives. The inspector says all three sinks showed signs of food being dumped in them.
Inspectors at the assisted living facility found raw eggs were found stored above ready-to-eat sauces in the walk-in cooler, and unsealed raw chicken was stored above unsealed ready-to-eat foods in the walk-in freezer. Ready-to-eat items were kept past the 7-day limit and had to be thrown out, including chicken salad, salsa soup, and shredded cheese; sliced turkey and apple puree had no date marking at all. Employee personal items, including keys, a jacket, a lighter, and a cigarette pack, were found scattered throughout the kitchen. There were no paper towels at the hand sink, and employees were cited for preparing food while wearing watches.
A box of bread and a box of cauliflower in the back freezer were found with heavy mold accumulation and were also discarded. Chicken, sausage, and ground beef all had to be thrown out after being held at an unsafe temperature. A can of mozzarella was found with an expired sticker, but employees in the kitchen said it just hadn’t been updated. The health inspection report posted for public view was showing a higher score than the actual grade, and allergy awareness information was not posted anywhere.
