David Chang’s fried chicken chain, Fuku, is teaming up with Peter Luger Steak House for a limited-edition sandwich coming to Coral Gables and West Palm Beach on Friday, October 9.

The Fuku x Peter Luger Sando adds the New York steakhouse’s famous thick-cut bacon and a spread made with its steak sauce to Fuku’s fried chicken.

Both South Florida locations will offer the sandwich for dine-in, takeout, and delivery, the announcement says.

Thick-cut bacon and “Luger Jam”

The sandwich starts with your choice of spicy or mild hand-breaded fried chicken on a Martin’s potato roll. Peter Luger’s extra-thick-cut bacon goes on top, along with white onion and “Luger Jam,” a combination of the steakhouse’s signature sauce and shallots.

The sauce gets a different role here. At Peter Luger, diners know it as an accompaniment to dishes like sliced tomatoes and onions, but Fuku adds it into the shallot spread, putting two of the steakhouse’s staples into a sandwich you can order to go. Diners can even pair the dish with a Luger Lager, the steakhouse’s beer collaboration with Brooklyn’s Threes Brewing.

“This collaboration grew out of a casual lunch at Fuku that quickly turned into a conversation with our culinary team about what we could create together,” Fuku chief brand officer Kaitlin Weinman said in the announcement.

Two New York restaurants, one South Florida special

The two brands share New York roots, but more than a century separated their start. Peter Luger has served New Yorkers since 1887, building its menu around dry-aged steaks and sides like German fried potatoes and creamed spinach.

Fuku launched in 2015 as part of Chang’s Momofuku family. Its original chicken sandwich began as a secret menu item at Momofuku Noodle Bar in the East Village. It soon became the basis for a separate business.

The collaboration follows Fuku’s expansion into South Florida this year. Its Coral Gables location opened March 11 at 135 Miracle Mile, while its West Palm Beach restaurant operates at 407 S. Rosemary Ave. The companies describe the sandwich as a limited-edition release but have not announced an end date.
