New Mexican restaurant to open in Lake Oswego

A new family-run Mexican restaurant is coming to Boones Ferry Road in Lake Oswego.
The owners, Valentin and Rocio Soltero, plan to open Mexican Mezcal Restaurant by the end of August at 15630 Southwest Boones Ferry Road, Suite 2. The site was previously occupied by Ivy’s Pho & Grill.
The married couple formerly owned the shuttered Corona Mexican Restaurant two blocks away for a decade — the first restaurant Valentin and Rocio Soltero opened. Summit Orthopedics purchased the former Corona site to expand its footprint and services.
“People already know us,” Rocio Soltero said. “Some customers are asking when we are coming back.”
The restaurant will serve authentic, traditional Mexican food and offer a full bar with a selection of tequila. The menu also features seafood specials and recipes from across Mexico.
“We are not a franchise,” Rocio Soltero continued, “Everything is made from scratch.”
Instead of working with partners outside their family as they did at their previous restaurant, the Solteros will run the restaurant with their children. Valentin Soltero has been working for his family’s restaurants for over 30 years.
“It’s a good spot, and we still like to be here,” Valentin Soltero said. “We want to start fresh with just the family.”
The restaurant’s title spotlights “mezcal,” an agave plant, as an ode to Mexican culture.
“We picked the name because of where we come from,” Valentin Soltero continued. “We see a lot of those plants, and Mexico is well known for tequila or mezcal. Mezcal is a part of Mexico.”
The Solteros hope locals will check out the restaurant and enjoy it.
“We’re focusing most on excellent service and for people to come and enjoy our food and have a good experience,” Valentin Soltero said. “To the community, we just want to say thank you for the support for 10 years that we were at the other location. We are excited to come back, and we just want to be a part of the community again.”
