This week in the Tennessee Valley, health inspectors found live roaches roaming a restaurant, around 80 lbs of chicken were discarded, employees were found handling food at unsafe temperatures, and raw foods were being stored over ready-to-eat food.
Health inspectors had to throw away 7 lbs of food due to multiple health violations. Inspectors found uncovered raw shrimp, eggshells, meat, and chicken improperly stored over ready-to-eat food. Garlic butter was held at unsafe temperatures and was discarded. Multiple foods, like deli meat and cooked lasagna, were held more than 7 days past the discard date. Inspectors noticed French fries being improperly thawed on the counter. Health inspectors observed an employee wash soiled dishes, then clean dishes without washing their hands. Another employee was found drinking from open beverages in the kitchen, on food preparation tables, and on the serving lines. The walls and ceilings of the ice machine were not clean to the touch and had a heavy accumulation of buildup.
Health inspectors had to discard around 80 lbs of raw chicken due to it being left unmonitored to thaw in the sink overnight. Inspectors found pizza sauce that was made with tomatoes left at an unsafe temperature 14 hours after prep. 15lbs of the pizza sauce was discarded during the inspection. Health inspectors had to close the establishment for imminent health hazards, opening back up 10 minutes later. There were closed packages of dry noodles kept under the handwashing sink. Health inspectors found a scoop resting in ready-to-eat Parmesan cheese. Multiple food products were either incorrectly dated or not dated at all.
Inspectors observed live roaches in the restaurant. Around 20 lbs of cut lettuce was discarded due to not being properly cooled. Milk and made-in-house salsa were held 7 days past the day of discard. Multiple foods, including sliced tomatoes, cut lettuce, raw meats, sour cream, and made-in-house pico, were held at unsafe temperatures. Inspectors found employees actively drinking from improper drinks in the kitchen area, on food serving lines, and next to clean equipment.
Health inspectors found a large container of noodles placed in the walk-in cooler the previous night, and inspectors had to discard the food during the inspection. Inspectors found a cook handling fried shrimp at an unsafe temperature; the shrimp had to be discarded. Cooks were found cutting raw meat on prep tables and wiping the prep table off with a sanitizer cloth that was not properly sanitized. Inspectors found dirty dishes left in two handwashing sinks and an accumulation of mold in the ice machine and walk-in coolers.
