If New York is the city that never sleeps, Paris is the city that never stands still. Paris Design Week is behind us, though it has left us with some new Paris addresses that lovers of good design will appreciate. Meanwhile, Paris Fashion Week is still ahead. At the very end of September, the fashion crowd will descend on Paris as fashion week begins on September 28. I imagine the hotels are already booked and the show schedules are full. What does that leave us with? Restaurants worth exploring.
This year, Paris is once again welcoming a new generation of restaurants that offer more than good food. Some bring together gastronomy, music and nightlife; others put interiors and design front and center; still others have drawn attention thanks to chefs who already have a following. These are the new Paris dining spots worth keeping on your radar.
Hando Champs-Élysées

This year, Hando opened its newest and most ambitious Paris location yet, not far from the famous Avenue des Champs-Élysées. Adrien Albou is behind the project, while chef Chiharu Takada leads the kitchen. The interior, designed by Studio Friedman & Versace, is especially striking, bringing Japanese references together with a contemporary Parisian sensibility for fashion and design. It is the kind of restaurant you visit for the food but linger in just as long for the space.
LOTTA
Opened: Spring 2026
Concept: Mediterranean cuisine / restaurant and bar

LOTTA opened near the Louvre this spring. It is the first independent restaurant from Charlotte Bereaud, the former director of the Crystal Room at Paris’s Baccarat Hotel. Juliette Rubel designed the interior, drawing inspiration from Italian interiors of the 1960s and 1970s to create a space that combines travertine, mirrors, wood and metal. The menu features contemporary Mediterranean cuisine, while the place itself feels like a restaurant, a bar and a beautifully appointed Parisian living room all at once.
Billie

Concept: Restaurant / hi-fi bar

Billie is one of the new Paris restaurants that see dinner as the beginning of the evening, rather than the end. Located near the Palais-Royal, it pairs food with a serious hi-fi concept, complete with its own sound system, DJ booth and vinyl collection. Behind the project are César Gourdou and Nicolas Saltiel, names well known on the Paris bar and restaurant scene. In short, what is on your plate matters just as much as what is coming through the speakers.
Ethanol

Concept: Wine bar / neo-bistro

Chef Maxime Bouttier opened Ethanol this year, just a few steps from his restaurant Géosmine. Housed in a former shoemaker’s workshop, the new space sits somewhere between a wine bar and a contemporary bistro. The menu features dishes made for sharing, while the wine is one of the main reasons to visit. Compared with the more serious Géosmine, Ethanol is intended as a more relaxed and sociable place to spend an evening.

Eskal

Eskal is the first independent project from chef Alexandre Chambat, who gained experience in kitchens including L’Astrance, Pavillon Ledoyen and L’Oiseau Blanc. At his new restaurant, he works with Ken Nanaumi. Together, they combine French culinary tradition with influences from their travels. Just a few months after opening, Eskal has become one of the new addresses to watch if you are interested in what is happening on the more ambitious end of the Paris dining scene.


Salto Bar

Salto Bar is the work of Diego Alary, a chef also known to a wider audience through the French version of Top Chef and social media. His first restaurant of his own opened in the 11th arrondissement and takes inspiration from Spain and Portugal. The concept is more relaxed, with an emphasis on Iberian flavors and an atmosphere that feels more like a night out than a formal restaurant.
Brasserie Fougue

Concept: Contemporary French brasserie

The Fuga group’s new brasserie in the Beaupassage complex on the Left Bank is designed as an all-day destination, from breakfast and lunch to aperitifs and dinner. The kitchen is led by chef Fanny Herpin, formerly of Allard, and the menu offers contemporary interpretations of classic French dishes.
BẾP

Concept: Vietnamese restaurant

BẾP is a new Vietnamese spot in Pigalle from the team associated with the Sobremesa project. The focus is on simple, family-style Vietnamese cooking without unnecessary complications. Cơm tấm, a traditional broken rice dish, has a special place on the menu. BẾP is also part of a broader Paris trend toward restaurants presenting authentic regional cuisines in a contemporary yet understated way.
