A new Mexican restaurant is bringing the flavors of Jalisco and the rest of Mexico to downtown Greeley.
Tres Amigos has been serving up birria quesadillas, tortas salgadas and a host of other Mexican favorites for half a decade to folks in Cheyenne, Wyoming. Late last month, the restaurant expanded its operations to Greeley.
“There’s a great opportunity to be downtown, and feel like we’re part of something,” partner Jonathan Iniguez said. “In Cheyenne, one location is on the outskirts of town and the other is in a shopping center. But this feels like a spot where people come together to make things happen. We want to be part of something, and it feels like we’re going to be able to build that here.”
Moving in to the old Luna’s Tacos & Tequila building at 806 9th St., Tres Amigos brings a more family-oriented dining experience to downtown.
“We’re a family restaurant, and we want to keep that feel,” Iniguez said. “There are a bunch of bars downtown, and they’re good at it. We’ll stick to what we feel we’re good at.”

But don’t worry, there will still be plenty of tequila stocking the shelves both upstairs and downstairs.
“We have two beautiful, big bars,” Iniguez said. There’s a lot of space, and we’re trying to fill it with as much tequila as we can.”
Tres Amigos is the brainchild of the “tres amigos” (Spanish for “three friends”) — Iniguez, Gustavo Camorlinga and Nain Ambrosio — who started the south-of-the-border restaurant in 2020, just north of the Colorado-Wyoming border.
That restaurant came to be, like many career pivots, in the midst of the COVID-19 pandemic. Prior to the shutdowns, Iniguez and Camorlinga were both serving, and Ambrosio was cooking in Fort Collins restaurants.
After a brainstorming session on what was next, the three came to the obvious conclusion.
“We thought, ‘Why don’t we do it for ourselves?’” Iniguez said.

They were looking for something in northern Colorado, Iniguez said, but when the original location on Lincolnway in Cheyenne presented itself, the group couldn’t pass it up.
The same thought process rang true a couple years later when the group opened its second location, again in Cheyenne, this time on Dell Range Boulevard.
“It was the closest thing to home that we could find,” Iniguez said.

And when Luna’s co-owner Brian Seifried let the group know about the downtown taco shop closing late last year and the building looking for a new tenant, it was almost a no-brainer.
“We’d been looking to expand and come back home to northern Colorado,” Iniguez said. “This is coming back to our roots, so we’re really happy.”
Guests have been excited since the soft opening on May 19, Iniguez said, and he’s been happy with the turnout, especially relying primarily on word of mouth for the restaurant’s opening.
“We just kind of turned the open sign on and have been hoping for the best,” Iniguez said. “But it feels good when someone is happy with their experience and lets you know they plan on coming back. Makes us feel like we’re doing it right.”
