A new food truck is making its debut in Boise, bringing Korean flavors and a personal touch to the Treasure Valley.

Chingu Eats held its soft opening today, with a grand opening planned for tomorrow. The truck is owned by William Simmons and Leo Lim, who combined different skill sets to make the business a reality.

“I turned 31, and I thought, you know, I need to kind of do a little bit different with my life,” Simmons said.

While Simmons handles much of the business side, Lim brings years of restaurant experience and family recipes rooted in Korean cuisine. His family has a background in Korean barbecue restaurants in Seattle.

“The must-try is for sure the Bulgogi bowl,” Simmons said. “It is my family recipe that we have had for generations,” Lim added

The pair said they saw an opportunity to introduce more Korean food options in the area.

“It is really hard to find Korean-type food here in Boise, Idaho,” Lim said.

That idea led them to start their own food truck, where each plays a different role behind the scenes.

“He is definitely more like the business manager. I am definitely more on the artistic. We make a really great team,” Lim said.

Beyond the food, both owners said they want to create a welcoming environment for customers.

“Chingu means friend in Korean. Everyone that steps forward to the truck is automatically our Chingu,” Lim said.

Chingu Eats plans to operate out of Wild Frontier Brewery and hopes to expand into events and festivals throughout the summer.
