TOWNSHIP — The space formerly occupied by Sombra here will be the new home to The Oxbow American Grill, an upscale restaurant that developers say will bring regional flavors and Southern hospitality.

The Oxbow is led by partners Jason Brumm, director of culinary, and Jud Heubach, director of operations. Together, they bring decades of experience in destination dining, culinary development and restaurant operations.

Brumm built his career in hospitality-driven destination markets, beginning in Florida’s Panhandle with culinary leadership roles at perennial favorites Café Thirty-A and WaterColor Inn. He later worked in Nashville with James Beard’s Strategic Hospitality before serving as culinary director for boutique hotel group Gravity Haus, overseeing culinary programs across Vail, Beaver Creek and Aspen.

“I believed there was an opportunity to create a restaurant here that could become part of people’s everyday lives while still feeling right for the occasions that call for something more,” Brumm said. “The Oxbow reflects the places, dishes and experiences that have shaped my life and career, all brought together in a restaurant created for our community.”

The Oxbow name reflects an idea central to the restaurant: a sense of place. Drawn from the region’s geography, history and connection to the outdoors, the oxbow concept influenced everything from the menu to the restaurant’s palette, textures, art and materials.
