Falco opened Tuesday, Oct. 20 at 2 Wilton Ave. in Norwalk, which has a history stretching back to the 19th century. According to Preservation Connecticut, the site initially housed an electric generating station built in 1891 to power local streetlights. It later served as a paper factory before the Norwalk Hat Co. acquired the property in the mid-1920s and expanded it for hat manufacturing. It has also housed several restaurants over the years, including Ash Creek Saloon and The Lighthouse, according to previous reporting. Most recently, 1920 Bar & Bistro operated there until it closed in 2025, according to the Norwalk Economic and Community Development office.
The restaurant’s executive chef, Jared Falco, previously co-founded Rosina’s Restaurant & Bar in Greenwich with Coby Blount in 2021. Falco previously worked at Fortina and served as executive chef at Washington Prime, Amore and Speedy Romeo, according to CTbites.
According to the restaurant’s OpenTable description, among the menu items are handmade pizzas, pastas and meatballs, as well as “ever-rotating dishes to reflect seasonality and local farm partnerships.” Its beverage offerings include craft cocktails, draft beer and wine.
According to Falco’s website, walk-ins are only available for cocktails and pizza during its first week, while tables require reservations. Reservations are available through OpenTable.
