LAS VEGAS—There was a palpable sense of anticipation in the room Wednesday night at Fontainebleau Las Vegas as the MICHELIN Guide officially returned to Sin City and, for the first time, unveiled its selections for the broader Southwest region.

For those of us who follow the evolution of dining in the West, this was more than another awards ceremony. It was a recognition that the Southwest has developed into a serious culinary destination.

The inaugural 2026 MICHELIN Guide Southwest selection includes 64 restaurants across Arizona, Nevada, New Mexico and Utah, representing 24 different cuisine types.

At the top of the evening’s honors was a restaurant that has long been synonymous with fine dining in Las Vegas: Restaurant de Joël Robuchon at MGM Grand, which received Two MICHELIN Stars.

Four additional restaurants received One MICHELIN Star, creating an interesting mix of established Las Vegas institutions and an emerging Utah destination.

In Las Vegas, é by José Andrés, was recognized for its highly creative Spanish-inspired tasting experience. Guy Savoy Las Vegas, another longtime standard-bearer of luxury dining at Caesars Palace, also earned a star.

Also at MGM Grand, L’Atelier de Joël Robuchon received one star.

For us Utah diners, Monte—located inside Beehive Distilling in South Salt Lake—received the first star for the State. Chef Martín Babio’s intimate tasting-menu restaurant takes a personal approach, blending French, Italian and South American influences.

Its star represents an important moment for Utah’s growing fine-dining scene.

The MICHELIN Guide also awarded 18 Bib Gourmands, a distinction that recognizes restaurants offering particularly good food at a good value. The Southwest list includes a diverse collection of neighborhood favorites and destination-worthy eateries, from China Poblano and Esther’s Kitchen in Las Vegas to Feldman’s Deli, Pho 77 and One More Noodle House in Utah; Pizzeria Bianco and Lom Wong in Phoenix; and Paper Dosa, La Choza and Jambo Cafe in Santa Fe.

Utah’s dining scene continues to make its mark as five restaurants were named to Southwest’s 2026 Recommended Restaurants list, spanning Park City and Salt Lake City.

Park City leads the Utah selections with Handle, Matilda, and The Nelson Cottage by High West. In Salt Lake City, Koyote and Star of India represent the city’s diverse culinary landscape.

What struck me most about the inaugural selection was its breadth. The Southwest’s food story isn’t confined to white-tablecloth restaurants or tasting menus. It encompasses regional traditions, immigrant influences, independent restaurants and chefs creating food that reflects where they live.

That sense of place was also central to MICHELIN Guide International Director Gwendal Poullennec’s comments during the ceremony. He praised the authenticity, creativity and character that MICHELIN’s anonymous inspectors encountered throughout their travels across the four states.

For those of us who eat, write about and celebrate food in this part of the country, Wednesday night’s announcement felt less like an arrival and more like the beginning of a much bigger conversation.
