A popular Tex-Mex chain is finally expanding into the San Antonio market. Gringo’s Mexican Kitchen is wrapping up construction on its newest location, bringing residents a major step closer to sampling its famous menu.

The company began work on a roughly 10,000-square-foot restaurant in February. Photos shared in the fall show that significant progress has been made.

“We look forward to welcoming guests who already know and love Gringo’s from the Houston area, while building new relationships with local guests, businesses, and future team members,” Heather McKeon, COO, told MySA. “What makes Gringo’s special goes beyond the food; it’s the genuine care, connection, and sense of community that keep people coming back.”

Plans for the site were revealed in the spring, when business officials filed for a ground-up build at 18390 I-35 in Cibolo, roughly 25 minutes from the Alamo City. Online records show it will feature a sit-down dining room, a bar, a delivery area, and a to-go department. The move marks a crucial growth moment for Gringo’s.

Founded in Pearland in 1993, the eatery is known for its philanthropy, creamy poblano sauce and ribeye street tacos — filled with onion, cilantro, queso fresco, salsa, and three ribeye tips. Menu prices can vary by location, but plates typically cost between the mid-teens and the low twenties.

While the company has roots in the Houston region, a map on its website shows only one other location outside the area – College Station. Company leaders are betting big on the San Antonio-area eatery, investing about $5.5 million in its creation, according to a state filing.

“We like to think of ourselves as the ‘Cheers’ of Tex-Mex, where everyone feels welcome,” McKeon said. “We can’t wait to bring our famous green sauce, Cadillac margaritas, and sizzling fajitas to Cibolo, while continuing our commitment to approachable value, community involvement, and creating a place where people can come together and celebrate life’s everyday moments.”

Folks have a few more months before they can walk through its front doors. Staff plans to begin hiring and training in March 2027. A grand opening is tentatively scheduled for April or May.

“We are grateful for the opportunity to grow into this community and look forward to making many new memories together,” McKeon said.
