This week in the Tennessee Valley, health inspectors observed live gnats infesting a kitchen, dead flies hanging over food, roaches inside a refrigerator, cigarette holes in the wall, and raw foods being held at warm temperatures.
This restaurant received more than 30 citations during the inspection. Live gnats were seen throughout the kitchen. The inspector found fly traps with dead flies hanging over food prep areas. Employees were seen eating over food prep areas and drying their hands on a dirty apron. Clean dishes still had food residue and splatter on them. Cut lettuce was being stored in grocery bags in the walk-in cooler. The inspector found cardboard being used to line shelves next to a steamer, fryer, and dry food storage area. Mussles, spices, flour, and an unknown liquid had been taken out of their original container and were unlabelled. Prepped foods like slaw, sauces, and heat-treated potatoes were not dated. Additionally, the restaurant didn’t have a thermometer to verify cooking temperatures. The inspector said the person in charge was unaware of food safety knowledge and food risk factors, and didn’t know about employee health reports or procedures.
The inspector found roaches on top of and inside a refrigerator, as well as cigarette holes in the walls. In the rooms inspected, they either did not have a fire alarm or the alarm didn’t have batteries. Fire extinguishers were noted to be expired for more than a year. It was reported that there were missing lamps, mildew around the bathtub, and poor ventilation. The ice machine was broken and covered with tape.
The health inspector had to move or throw away cooled and raw foods due to their cooling unit being broken. It was reported that the inspector had to throw away four pounds of chopped kale after being held at unsafe temperatures. The report says raw oysters, beef, mussels, eggs, and sliced tomatoes had to be put on ice. An employee was seen drinking from a container in a food prep area. The restaurant’s gaskets needed to be cleaned, and the hand sink was broken.
