Travelers moving through Concourse C at Denver International Airport now have a new spot to sit down for a meal or grab a cocktail before their flight. Olive & Finch and Bar Finch opened a new restaurant and bar at the airport, marking the first time the Denver-founded brand has run a full-service restaurant inside DIA.
The opening comes after a grand opening ceremony held Tuesday at Concourse C, according to 9News. Denver International Airport lists the combined Olive & Finch–Bar Finch concept in its own dining directory, placing it in the C Gates with daily hours of 6 a.m. to 10 p.m., according to flydenver.com. The airport’s listing also notes that grab-and-go service at the location runs 24/7.
Earlier reporting from whatnow.com described the two concepts as side-by-side locations planned for Concourse C West near Gate C38, while the airport’s directory places the location near Gate C36. That earlier report had expected the opening in early September.
A Full-Circle Moment for a Denver-Born Brand
Mary Nguyen, founder and president of Olive & Finch Collective, said opening the restaurant and bar at DIA was a full-circle moment for the company, per 9News. Nguyen said the brand has served Denver for 13 years, and that bringing its food to travelers passing through the airport was part of the goal behind the new location.
The airport’s own listing backs up what that food actually looks like on the menu: Olive & Finch serves chef-crafted breakfast, lunch, dinner and grab-and-go favorites made with fresh, high-quality ingredients, according to flydenver.com. Bar Finch, meanwhile, offers handcrafted cocktails, local beers, wines and non-alcoholic beverages for travelers looking for a drink before boarding. Nguyen has described the brand’s broader approach as committed to scratch-made, chef-driven food, per 9News.
Airport Leadership Weighs In
Dave LaPorte, interim CEO of Denver International Airport, said Olive & Finch offers travelers a distinctive dining experience rooted in the community, according to 9News. LaPorte also said the brand’s expansion at DIA supports small-business growth and contributes to the regional economy, the outlet reported.
The new restaurant and bar include a 24-hour kiosk alongside quick-service and grab-and-go options, giving travelers multiple ways to order depending on how much time they have between flights. It’s not the brand’s first foray into airport grab-and-go service, either. Olive & Finch Collective previously opened a grab-and-go kiosk called Finch, on the Fly, in Concourse A, and the airport separately lists an Olive & Finch Grab & Go in Jeppesen Terminal that it describes as a 24-hour location, according to flydenver.com. DIA also lists a related concept, Little Finch, in the C Gates with grab-and-go service that’s always open.
Part of a Bigger Growth Push
The DIA opening fits into a broader expansion strategy for the company. A 2025 report from qsrmagazine.com said Nguyen hoped to double Olive & Finch’s footprint within five years, including by pursuing opportunities outside Colorado and growing its wholesale business with institutions like airports and hospitals. Mary Nguyen founded Olive & Finch in 2013, and the brand has since grown from a single Denver storefront into a multi-location group.
A 2026 feature in the Denver Business Journal characterized Nguyen’s restaurant group as continuing to branch out and invest in neighborhoods after years of focusing on downtown Denver. The new DIA location adds one more stop to that growth story, joining an airport dining scene with more than 85 venues that continues to add new options for travelers passing through.
