South Carolina-based Vicious Biscuit is opening a new restaurant in Greenville.
The Southern breakfast and lunch chain is moving into a 3,000-square-foot location at the University Commons, 3030 S. Evans St.
The space was previously occupied by Noodles & Company. That restaurant closed in 2025.
Vicious Biscuit already has corporate locations in Charlotte, Wilmington and Boone, as well as restaurants in South Carolina, Ohio, Florida, Indiana, Mississippi and Louisiana.
The new Greenville franchise location will be operated by local restaurateur Chris Carnes, along with Ben Fields and Jonah Greenup, according to an announcement.
Carnes already operates a Chicken Salad Chick restaurant in Greenville.
“Carnes brings more than 25 years of restaurant experience to Vicious Biscuit,” an announcement from Vicious Biscuit said. “He opened his first Zaxby’s in 2001 and grew to 11 locations before adding Chicken Salad Chick to his portfolio three years ago. Today, he operates six Chicken Salad Chick restaurants in North Carolina with two more under construction.”
Carnes said he noticed the customer traffic at the Vicious Biscuit location in Boone near Appalachian State University and connected with the chain’s executive leadership.
“When I got into Zaxby’s more than 20 years ago, it was still early, and I saw what that could become,” he said. “I told myself years ago that if I ever came across another opportunity I really believed in, I wasn’t going to let it pass me by. I like where Vicious Biscuit is today and the opportunity to grow with it.”
He’s optimistic about the Greenville location, which is near a local Target store.
“We’ve had a great relationship with Greenville, and the people here have been some of the most welcoming we’ve encountered,” Carnes said in a statement. “Between East Carolina University, the medical community, young professionals and families, there’s a great mix of people here. And there really isn’t anything quite like Vicious Biscuit in the market.”
The Southern chain also has new restaurants planned in Georgia, Virginia and Mississippi.
Its menu features breakfast and lunch items, including biscuit sandwiches.
George McLaughlin, Vicious Biscuit’s CEO, is optimistic about the franchise deal with Carnes.
“Chris knows restaurants, but just as importantly he knows Greenville,” McLaughlin said in a statement. “He understands the community, believes in what we’re building and shares our philosophy that hospitality starts with people. We couldn’t ask for a better partner to bring Vicious Biscuit to Greenville.”
The new local restaurant is expected to open later this year, according to QSR Magazine, a restaurant industry publication.
