A beloved San Antonio chef is returning to the city for one night only at Cherrity Bar on the East Side.
James Canter, the former owner of Guerilla Gourmet, is headlining the Oct. 1 edition of the St. Paul Square Dinner Club — which meets monthly to celebrate local chefs. The event is a return home for Canter, who has spent several years in Korea working with local chefs while studying traditional cooking techniques and regional cuisine.
St. Paul Sqaure Dinner Club has not yet announced a menu, but the multi-course meal will combine Canter’s cooking with Korean-style fermentation and other techniques he learned abroad.
“James is one of those chefs who is constantly learning, traveling, and evolving, and you can taste those experiences in his food,” Kimberly Suta, founder of St. Paul Square Dinner Club, wrote in a news release.
“Having him back in San Antonio after spending so much time in South Korea gives us a really unique opportunity to experience some of what he’s discovered there, but through James’ very distinctive culinary lens,” she added.
Guerilla Gourmet first opened in 2014 in Victoria, fusing South Texas flavors with global cuisine. In 2018, Canter turned the concept into a food truck and moved to San Antonio.
Canter received state-wide attention in 2017 during the aftermath of the devastating Hurricane Harvey. He opened Guerrilla Gourmet to the community, offering a free hot meal to anyone impacted by the storm.
“Cultural food and its traditions are a doorway into beginning to understand a culture’s people — all we have to do is walk through it with an open mind and an open heart,” Canter wrote in the news release.
