Ah, early fall—when the air turns crisp, pumpkin spice makes its comeback, sweaters come out of the closet and restaurant openings start rolling out. Fall is always an exciting time: restaurant scenes shift with new openings, trends from earlier in the year take shape and the busiest stretch of the calendar begins in earnest.
This season—continuing a jam-packed 2026, so far—will bring new ventures from storied names as well as ambitious debuts. Wine is central to all 10 restaurant openings below, each worth keeping on your radar.

The Corner Store (Las Vegas)
These days, New Yorkers can’t stop standing in line—for frozen yogurt, bagel pop-ups, dot cakes, you name it. One of the city’s most notorious lines forms outside the Corner Store, the SoHo bistro-meets-Americana spot that’s become a blockbuster success for Catch Hospitality Group, known for gourmet pizza rolls, sour cream and onion Martinis and wine director Emily Buse’s thoughtfully assembled cellar. The long-awaited second location of the Corner Store is opening inside the Cosmopolitan Las Vegas, joining Carbone, Cote and Peter Luger Steak House in the wave of Big Apple restaurants now on the Strip.

Enlō (Greenville, South Carolina)
It’s getting increasingly easy to eat and drink very well in Greenville, with a growing city and top restaurants, including the expansive cellar and hospitality of Soby’s, which won the state’s first-ever Grand Award in 2025. Soby’s hospitality group, Table 301, is expanding with the opening of Enlō, a tasting-menu destination from chef Nico Abello. His French training shows in dishes such as mushroom velouté, tuna loin with tandoori yogurt and roasted scallop with cauliflower mousseline. Table 301 beverage director Joe Crossan is building the wine list, with more than 400 selections and an emphasis on Champagne and Burgundy.

Humm (New York City)
After more than two decades helming Grand Award winner Eleven Madison Park, chef Daniel Humm is opening his latest restaurant, simply named Humm. The Swiss-born chef has refurbished the former En Brasserie space in New York’s West Village, where he is collaborating with French architect and designer Pierre Yovanovitch and Italian painter Francesco Clemente (whose art inspired Eleven Madison Park’s cocktail lounge, Clemente Bar). At Humm, the chef will prepare “modern American” dishes in the style he’s refined over the years. Early menu previews include endive salads, oysters and roast chicken. Michael Duffy, former wine director at Rezdôra Osteria Emiliana and Massara, will lead the wine program.

La Sponda (Miami)
Gioia Hospitality Group, the team behind Daniel’s, a Florida Steakhouse and Daniel’s Miami—a cosmopolitan steak house holding one of the city’s largest wine cellars—is opening La Sponda, a new waterfront Italian destination inspired by the Pugliese heritage of co-founders Thomas and Kassidy Angelo. The team, including beverage director Daniel Bishop, spent months traveling across Italy to prepare for the opening. Bishop’s wine list will concentrate on the landmark regions of the country, ranging from Piedmont and Tuscany to Puglia and Sicily.

Ludico (New York City)
Tribeca Hospitality Group—the team that brought the expansive Monte-Carlo steak house Beefbar to New York City—unveils its first original concept: Ludico. The restaurant will bring the European dining style its founders adore to New York. Chef Nelson Gonzalez’s Spanish and Mediterranean cooking anchors the menu, with early highlights including lumache pasta with lamb merguez sausage and veal chops au poivre. Rockwell Group designed the space around a glass-encased wine room stocked with wines from across the Mediterranean.

Ondîne (New York City)
Chef John Fraser will have a homecoming of sorts when he opens the French bistro Ondîne in New York’s West Village this September. The location on Bedford Street was once Snack Taverna, the restaurant where Fraser got his start as head chef, long before he opened his own restaurants, including Lilac in Tampa, North Fork Table and Inn on Long Island and the Vermilion Club in Boston. JF Restaurants’ beverage director Amy Racine leads the French-leaning list, highlighting smaller regions across France—think Auvergne, Savoie and Corsica—as well as standout selections from Bordeaux and Burgundy.

Pari (Brooklyn, New York)
Opening in the Brooklyn neighborhood of Williamsburg, Pari is the debut from co-founders Max Aronson and chef Harrison Geller—the two met at Carbone in New York, where Aronson worked the front of house and Geller was in the kitchen. True to its distinctly French concept, the wine list—selected by Brad Nugent, previously regional beverage director for Major Food Group, where he oversaw programs at the Grill and Torrisi Bar & Restaurant—will predominantly feature French wines.

The Pass by Charlie Palmer (Paso Robles, California)
Charlie Palmer is one of those chefs who can’t rest. Hot on the heels of opening Appellation Healdsburg, an expansive Sonoma hotel with vineyard views and a flagship restaurant, Folia, headed by his son, Reed, Palmer is expanding into new wine country this fall, launching the Pass in Paso Robles. The new steak house boasts more than 180 seats and an in-house beef dry-aging program. The wine list will spotlight gems from Paso Robles, with additional selections from around the world.

Quello (Greenwich, Connecticut)
After nearly a decade running some of Brooklyn’s most celebrated wine-focused restaurants, restaurateur and author Joe Campanale is heading to Connecticut to open Quello. He’s partnering with chef Abram Bissell, who will bring his decades of experience at Eleven Madison Park, the Modern and other kitchens of distinction, as well as the influence of his own Italian heritage. Campanale, who has primarily focused on Italian wines throughout his career, has constructed a list of more than 400 selections centered on Italy and neighboring Mediterranean regions, as well as back-vintages of Burgundy and Champagne.

Spacca Tutto (Los Angeles)
After earning a 2026 Grand Award with Caruso’s in Santa Barbara, California real estate mogul and 2022 Los Angeles mayoral candidate Rick Caruso has teamed up with chef Nancy Silverton for Spacca Tutto, an Italian steak house. The new restaurant is located in the Palisades Village shopping district, which closed in January 2025 during the Palisades fires that devastated the area and reopened in summer 2026. The wine list will feature nearly 250 labels, primarily from Italian producers and domestic wineries.
