OKLAHOMA CITY –
Pickle Dr Pepper, Deep-Fried Ranch and a corndog coated in ramen noodles are among the dozens of new foods and drinks coming to the 2026 Oklahoma State Fair.
Fair officials unveiled this year’s new menu ahead of the fair’s return to Oklahoma City in September.
The lineup includes new takes on classic fair food, dishes inspired by flavors from around the world and plenty of things served on a stick.

Here’s a look at the new foods and drinks fairgoers can try this year.
New savory foods

James Beard Award winner Chef Andrew Black is among those joining the fair food lineup this year. His Perle Mesta pop-up will serve slow-smoked Mango Bourbon Pork Ribs with a sweet and tangy mango barbecue glaze.
Some new dishes combine familiar foods in unexpected ways. Bad Boys BBQ is serving Birria Ramen, pairing slow-cooked birria with ramen noodles, broth, cilantro, onion and lime.

FryDay Concessions is replacing the traditional bun with a glazed donut for its Donut Smash Burger, while Deep-Fried Mashed Potatoes is putting ranch filling inside dough, breading it and dropping it in the fryer for Deep-Fried Ranch.

The Pork Belly Lollipop from 1907 puts smoked pork belly on a stick and finishes it with a Dr Pepper barbecue glaze. The vendor is also adding a Korean BBQ Beef Skewer with Hatch green chile aioli.

Chan’s Eatery is combining two Korean food trends with its Buldak Carbonara Ramen Korean Corndog. The half-mozzarella, half-hot dog corndog is coated in crispy Buldak carbonara ramen noodles and finished with cheesy seasoning and a creamy, spicy Buldak carbonara sauce.
Chicken Al Pastor Calzone from Rodney & Lisa Double Stuffed Pizza

Rodney & Lisa Double Stuffed Pizza will be offering a fusion dish with Chicken Al Pastor Calzone. The calzone is stuffed with Al pastor-marinated chicken, pineapple, peppers, onions and cheese.

New sweets
Cheesecake gets several fair-food transformations this year, but it’s far from the only dessert getting an upgrade.

Wade Shows Funnel Cake is introducing Cookie Butter Cheesecake Bites On-A-Stick, with fried cheesecake covered in cookie butter, Biscoff crumbles and white chocolate. The vendor is also offering an OREO version topped with powdered sugar, white chocolate and cookie crumbles.

Rush Springs Watermelon’s Very Berry Nerdy Watermelon starts with a fresh watermelon spear, then wraps it in Fruit Roll-Ups and covers it with berry NERDS.

The Cheesecake Colada from Your Just Desserts features New York-style cheesecake dipped in pineapple-flavored white chocolate and covered with coconut. Granny’s Cheesecake & More is turning cheesecake into a taco with a chocolate-dipped shell, cheesecake filling and fresh strawberries. The vendor is also serving Dubai Chocolate Covered Cheesecake topped with Dubai-style chocolate and crispy kataifi.

Dragon Street Eats’ K-Pop Marshmallow Ice Cream wraps ice cream and a chocolate wafer in marshmallow before flame-toasting it.

The Bacon Habit is combining Dr Pepper with pickle flavor for one of this year’s more unusual drinks.

Then there’s Hot Honey Chicken Lemonade from Deep-Fried Mashed Potatoes. The lemonade is made with hot honey and popping juice pearls and comes garnished with two hot honey chicken nuggets.

Chan’s Eatery is also introducing a drink inspired by a popular Thai dessert. The Mango Sticky Rice Refresher combines coconut milk and mango and is finished with a mango sugar rim, dried mango and fresh mango chunks. Another fruity drink take on a traditional dessert is the Strawberry Crunch Horchata from Agua Fresca, which features strawberry horchata with a strawberry cream-lined rim and strawberry crunch topping.

Fruit flavors are a common trend with drinks this year. A Latte Love will offer a NEON Dreamsicle Energy drink, made up of orange cream and sweet strawberry, powered by green coffee extract, L-theanine, vitamin B12, and guarana. Bofloto by Afrikan Delights will feature a tropical hibiscus drink served in a fresh pineapple.

When is the 2026 Oklahoma State Fair?
The 2026 Oklahoma State Fair runs Sept. 17-27 at the OKC Fairgrounds in Oklahoma City.
The fair runs for 11 days and includes rides, food, competitions, exhibits, concerts and other entertainment.
Fairgoers will be able to use the Oklahoma State Fair’s online Food Finder once the fair opens to locate specific foods and vendors.
