COLUMBUS, Ohio (WSYX) — A new restaurant concept is coming to Columbus’ Short North, taking over a space at 19 W. Russell St. that was previously occupied by Woodhouse Vegan.

Canario is being launched by partners Marco Piazza and Chef Jeremy Nelson, who have a combined 40 years of industry experience. Nelson brings a modern approach to cooking shaped over a 20-year culinary career, with experience in Michelin-starred kitchens, including Charlie Trotter’s in Chicago.

Piazza said he wants the restaurant to avoid the “stuffiness” often associated with fine dining. “I feel like with Jeremy’s background, Canario comes with this high-end feel, but I still want to capture the neighborhood,” Piazza said.

Piazza is a founding partner of Atlas Tavern and Nomad Restaurant in Polaris and has since left those businesses to form Cut and Dried Consulting. Canario aims to offer a high-quality dining experience while maintaining a local feel.

The restaurant plans to offer a happy hour from 3 to 5 p.m. five days a week, ahead of dinner service. Service will include a tasting menu, with the option to order a la carte items.

Canario is named after Piazza’s dog, Beluga, a presa canario breed. The bi-level space will seat 42 and include an open kitchen and bar. A parking garage is located a couple storefronts away, and the restaurant will validate parking, Piazza said.

Canario is expected to open soon.
