Preparation

  1. Preheat oven to 400 degrees. Heat butter in large skillet. Add onion, green pepper, jalapeno and garlic, and cook until softened. Stir in shrimp, cook 1 or 2 minutes until just opaque, and then add tomato and parsley. Season with salt and pepper.
  2. Transfer to shallow baking dish, preferably earthenware. Drizzle with oil, and bake for 10 to 15 minutes, until bubbling. Serve at once.
