Preparation

  1. Peel the turnips and cut them into half-inch cubes. Put in boiling salted water and, when it comes to the boil again, cook 15 minutes. Drain.
  2. Brown the butter lightly in a saucepan, add the turnips, sprinkle with sugar and salt, and keep on stirring until they are lightly browned. Add the stock and simmer about half an hour, or until tender. Season with white pepper.
