  2. You got the whole process right, but the rice looks overcooked and the grains are too broken up. I don't like to use Arborio for that reason and prefer Carnaroli.
    Butter and Parmigiano only when you turned off the flame and left It for a minute to cool. Stir vigorously After adding butter scooping the rice from the bottom to the top, trapping air in the butter and making everything creamy.
