This richly spiced Apple Pie served with a brandy creme Anglaise from the fall chapter of MY BOOK is a delicious celebration of autumn. The crisp butter crust is spiced with cinnamon and spiked with apple brandy. And those leaves look so impressive but are beyond easy! I have ALL my favorite spices in this pie and while you can use any of your favorite baking apples I would suggest you use some soft ones to really get that lovely play of textures with the pie and pourable custard. This is the first channel I've ever heard someone mention Kumquats. Despite the silly name, they are a nice little sour fruit – if I recall correctly. It's been about 15 years but when I was a kid my buddy and I would raid the neighbor's Kumquat trees for a snack while we were outside playing or ding dong ditching – whatever we did as kids.

Awesome apple pie and SO stunning visually with the very flaky pastry, beautiful colour, layers of thin apple, alcohol (burned off!), 'caramel' and of course the leaves which make it a masterpiece! As a 'Brit' I am pleased to see your 'English Custard' (though it's a bit strange to see it poured cold.) Also, the most famous cooking apple here is called a 'Bramley' and apparently all the Bramley apple trees are descended from the one original which is STILL (just) alive! Finally, recently I watched a video of you in London visiting cake-shops and realised that I walked right past you filming! I didn't recognise you that time so when are you visiting us again?!
