SPATCHCOCKED CHICKEN | ROASTED VEGETABLES | GARLIC, LEMON, AND HERB BUTTER

Ingredients & Measurements: (Feeds 6) (Bake @425F for 1 hour, or until the internal temperature reads 165F)

Chicken…
6-pound WHOLE Chicken (cleaned, spatchcocked, and patted dry)

For the Garlic Lemon Herb Butter
2 TBS of olive oil
1/2 TSP fresh thyme
** You can also add some fresh Rosemary… If you like! πŸ˜‰
2 TBS fresh garlic.. minced
2 TBSP of fresh parsley (chopped)
1 TSP of fresh lemon zest from a lemon
3 TBSP of fresh lemon juice
1 stick (8 TBSP) of butter (I use sweet/salted)
1 TSP salt (I use kosher)
1/8-1/4 TSP freshly ground black pepper

*ALSO need… Olive Oil (drizzle over chicken, ONCE coated with butter herb mixture)

For the Vegetables:
1 bag of petite yellow potatoes (quartered)
1 bag of petite red potatoes (quartered)
About 4 large carrots (quartered)
3 TBSP fresh parsley (chopped)
2 TBSP of fresh garlic (chopped)
1/2 TSP of fresh Thyme
Salt & Pepper to taste
2 TBSP of paprika
*Olive oil (drizzle all over vegetables)

HEY REXY, that was one amazing looking dinner, that Spatchcocked Chicken was cooked to perfection, and that recipe of Garlic herb and Butter was right on point you could not ask for a better rub for that chicken, I will beat you that chicken was awesome tasting. Those vegetables were outstanding looking and that is my favorite combination of vegetables together, and the seasoning was perfect for them. OUTSTANDING JOB REXY. GOD BLESS YOU.!!!!!

  9. Wow Rexy, that's what I call a perfectly roasted chicken, with all that juices inside the breast, awesome cooking! Love this roasting technique, in fact this is the only way I do the roast chicken. And this garlicky herby butter, I'm speechless. πŸ˜‹
