The best rice dish ever has got to be Yotam Ottolenghi’s mejadra, or as some know it mujaddera, or simply as lentils and rice. It’s an easy plant based recipe where lentils and rice are cooked with spices and served under a mountain of fried onions. What’s not to love? In this video I show you how to make mejadra using a recipe from Otolenghi’s book, Jerusalem. His signature style is to take a classic recipe and breath new life into it, here he does that by adding coriander seed, cumin seed, allspice, turmeric and cinnamon. What I love most about this dish is that it is so economical, using pantry staples while being exotic at the same time. In this video I show you how to fry perfect onions every time and which rice is best for making mejadra. I serve mejadra with a simple dollop of yogurt or a simple cucumber salad made of cucumbers, garlic, red onion, cilantro and a little lemon juice. The fresh sour salad pairs beautifully with the earthy warm lentils and chewy sweet fried onions.   1. Well of course I like lentils and rice, and fried onions are WAAAY up there. So this recipe with such a large amount of fried oneions make me wanna try this quite soon. Of course I'll use HER suggestions of spices my first time around.

  2. Made this today, it was so delicious. The only spice I didn’t have was the allspice which I replaced with 1/4 tsp ground nutmeg and 1/4 ground cloves. It was just perfect. Thanks. I too am a fan of Ottolenghi.

  3. I didn't have very high expectations for this dish. I tried it mostly because rice, lentils, and onions are very cheap. It's humble looks are deceiving. Such cheap ingredients have no right to taste this sophisticated. We absolutely love Mejadra! It's just a perk that it's also very economical.

  4. Ingredients

    1 1/4 cups (250g) green or brown lentils
    4 medium onions (1 1/2 pounds; 700g) before peeling
    3 tablespoons all purpose flour
    About 1 cup (250ml) sunflower oil
    2 teaspoons cumin seeds
    1. 1/2 tablespoons coriander seeds
    1 cup (200g) basmati rice
    2 tablespoons olive oil
    1/2 teaspoon ground turmeric
    1 1/2 teaspoons ground allspice
    1 1/2 teaspoons ground cinnamon
    1 teaspoon sugar
    1 1/2 cups (350ml) water
    Salt and freshly ground black pepper

  5. Thank you for this great video. However, could you, please, credit the Palestinian co-author of Jerusalem, Sami Tamimi? Part of the awesomeness of this cookbook is the collaboration of an Israeli and Palestinian chef in paying tribute to the cuisine of the city both love. I loved your video, but was disappointed all through that you failed to give credit to Ottolenghi's partner and friend. Omitting the Palestinian chef from a dish that is deeply rooted in Palestinian culture, is a sad oversight. Best wishes to you and yours.

  6. Majedaar means Delicious in Hindi either someone who mistook the word or he thought this is the only delicious food He got named Mejadara by jumbled the actual word.

  7. I absolutely love this dish. My husband is Palestinian and I’m Egyptian, so we have different variations of this meal, his is Mejadra and mine is Koshary. I’m in the process of creating a mix of both at home 😂❤

  10. This is for sure not how Moujadara looks when finished …at least fry the onion till nice and crispy then add them when it is all cooked plus not so much species …and yes I come from a family that are the best at cooking Syrian or Middle Eastern food …GOOD LUCK
