  2. Those croissants look good…but not great. Other chefs have achieved much better layer definition. It's strange to use egg in the dough of a croissant…this dough is more like Danish dough. The butter lock-in is weird because the dimensions of the dough slab were too big, which causes LOTS of dough to have no butter.
