So, this is my kitchen table, where I let my jars sit after canning. Yesterday I pressure canned marinara; two weeks ago I canned chicken and the week before that black beans. The jars usually end up in a similar configuration to this to cool. In all three batches, the jar in the position I (attempted!) to circle doesn’t seal. And that’s the only one that doesn’t! Three times! Any ideas what’s up with that? Obviously not an emergency or anything, I’m just curious why this might be. 🙂

    Hmm. Some questions:

    Does that jar show signs of siphoning?

    Are the jars placed on this surface in the same order each time? By that I mean on my table that jar would be the first one out typically.

    Where is the doorway to this area in relation to the room? Would that jar be exposed to greater or less temperature variation/drafts/ whatever?

    And finally is the jar in that position on the table generally *in a specific position in your canner*, like is it the center jar?

    The one and only time I had a strange siphoning/seal failure issue happening, it was always the center jar in my canner, that went in position 1 on my table to cool. First jar out lol. So best I could figure it was getting subjected to a more rapid temperature change that caused the siphon, and the siphon caused seal failure.

    I started taking the center jar last and the issue stopped. Go figure.
