Greek Stuffed Egg Plant Imam – Recipe from Crete, Greece
Imam Baildi AKA Stuffed Eggplant Aubergine

Recipe:
– Cut 6 eggplants in half, take out the middle, and let soak in salt water for 30 minutes
– Next, sauté in olive oil for 5 minutes. (make the eggplant flat and sautéed it as I like it better than frying. You can also paint olive oil on them and roast them for about 1 hour, being the healthiest way.)
– Put feta cheese and a Greek goat cheese on top of the eggplant
– Add sauce on top

Sauce:
6 onions sliced
6 cloves garlic
Add all of the eggplant insides chopped
1 cup chopped parsley
4 tomatoes
½ cup of olive oil
2 Bay leaves
1 teaspoon Sea Salt & Pepper
(No water & boil for 20 minutes)

– Then add the sauce on top of the cheese on top of the eggplants and
– Bake 360° F (180C) for 20 minutes
